It’s been pretty quiet on here for a while, so I figured I should explain what’s going on. Banksia Confectionery in The Netherlands has closed as my family and I have relocated back to Australia. It was rather sudden but purely to do with my partners work.

A huge thank you to my customers over the nearly 3 years I operated in and around Amsterdam, so many of you were repeat clients and had such wonderful feedback about my products.

I’m not sure what’s next, hopefully Banksia Confectionery will pop up again in whatever format I manage. Watch this page for updates, thank you again for 3 great years!

I’ve hinted at things changing over the last week and I can now confirm how things are going to go moving forward.

Previously I would attend two markets a month and have a variety of items on the website for purchase at all times. With the rise in ingredient costs as well as other factors I’m switching to a trial rotating menu.

What does this mean? Each week there will be a limited number of boxes available, each one will have 4 items from a set menu announced earlier in the week. Orders will open Tuesday, close Thursday and able to be collected on Saturday between set hours at a set location.

Cakes will still be able to be ordered in advance as well as full batch orders of lamingtons and select other Australian items. The goal is to reduce product waste and narrow the number of ingredients being used each week but maintain quality. I can also expand what I’m able to make as I’m not transporting to a market.

If this works then I’ll be able to offer a virtual market where you can pick and choose to create your own bakery box.

Thank you to everyone who came out today to purchase or even just to send congratulations. It was an epic day with pretty much all the fresh products sold out. There’ll be a small number of chocolate and confectionery items uploaded tomorrow (or Tuesday, let’s be real) which will arrive in time for Christmas.

Also thank you to everyone who accepted a sample for my aggressive 4 year old, you made her day.
