The wine of tomorrow, today!
Domaine Muller-Koeberlé is taking Pét-Nat to a whole new level.
This is a refined, seriously crafted sparkler packed with fresh strawberries, zesty blood orange, and a soft, creamy mousse.

The trick? It's made from 50 different PIWI varieties, all interplanted in a single field.

But what is PIWI? They are fungus-resistant grapes created through traditional, manual crossbreeding—absolutely NO genetic modification!

Traditional vineyards, even organic and biodynamic ones, often require frequent spraying of natural fungicides like copper and sulfur to fight off mildew, especially in wet vintages.
PIWI varieties drastically change this dynamic:
• Fewer treatments: Up to 80% fewer fungicide sprays compared to traditional
grapes.
• Lower carbon footprint: Fewer tractor passes means less soil compaction and
significantly reduced fuel consumption.
• Healthier soils: Less copper buildup protects local microbial life and
groundwater.
While still a niche in the global wine market, PIWIs are gaining major traction in cooler,
wetter European climates where fungal pressure is highest.

With his Scheu to the World 2025, Christian Ottenbreit gives the grape's untamed energy the space to speak for itself, revealing a remarkably savory, natural expression. This is a barrel-aged wine defined by focus, precision, and aromatic finesse, built on tension and structure.

Rennersistas – Waiting for Tom Weiss 2023

Inspired by Samuel Beckett’s existential masterpiece Waiting for Godot, this bottle is a tribute to the profound art of waiting, with a nod to two old friends both called Tom.

A masterful blend of Chardonnay and Weissburgunder, the wine spends 21 months waiting on its lees in big, old Austrian oak casks.

In the glass, it pours a beautiful straw yellow with a green sheen, slightly hazy just to let you know at first sight where it’s coming from.
Vibrant ripe pear and bright citrus fruit.
Delicate white flowers, warm brioche, and toasted hazelnut.
A faintly creamy texture with an elegant, lingering finish of salted almonds and crushed stone.

It is highly finessed and mineral-driven, kept perfectly in balance by a refreshing, precise spine of acidity.

the old Julian calendar in Greece, Serbia, and across Eastern Orthodox Churches). To honor this shared
heritage, we are hosting a very special, cross-cultural, multi-ethnic Spring Tasting at Craft Wine.
