Ingredients:
โข 2 salmon fillets
โข 1 ripe avocado, diced
โข 1 tomato, diced
โข 1/4 red onion, finely chopped
โข A handful of fresh coriander, finely chopped
โข Juice of 1 lime
โข 2 tablespoons olive oil
โข Salt and pepper to taste
Preparation:
1. To make the salsa, mix the diced avocado, tomato, red onion, coriander, lime juice, olive oil, salt and pepper in a bowl.
2. Heat a grill pan over medium-high heat and grill the salmon fillets on each side for 3-4 minutes, or until cooked through.
3. Place the grilled salmon on a plate and spoon the avocado salsa next to or on top.
