For our pour overs we grind on the EK43 and brew on a ceramic V60 with the Sibarist B3 filter paper. The B3’s advanced flow dynamics open a wider extraction window, letting us draw out more sweetness, juiciness, and clarity while showcasing both roast profile and coffee quality.

On the 30th, we’re excited to welcome our friend Manuel Alexander Barsallo from Panama to Ripsnorter.

This one is for the Geisha lovers.

Manuel has spent years producing some of Panama’s most exciting coffees, focusing on quality, innovation, and showcasing what Panamanian Geisha is capable of.

For this cupping, he’s bringing an entire lineup of Geishas. Washed, Honey, and Natural. A true Geisha party.

The twist? We don’t actually know which lots we’ll be cupping.

Manuel is keeping the lineup a surprise and will guide us through the cupping one cup at a time, sharing the story, the producer, the process, and what makes each coffee unique as we taste together.

It’s a rare opportunity to experience the diversity of Panamanian Geisha through the person who produced the coffees himself.

If you’ve ever wanted to dive deeper into one of the world’s most celebrated coffee varieties, this is one you won’t want to miss.

The roastery is firing on all cylinders again and our original packaging has officially returned. Looking back, this is what it all looked like back in the day.

Meanwhile, Black Bag Man disappeared into hibernation somewhere along the way. We’re not exactly sure where he went, but we have a sneaky suspicion he won’t stay asleep forever.
