I never get tired of soups! Warm, spicy, mild, intriguing, silky, hearty, umami rich. They are often humble food made from reasonable ingredients. However if you start from your own slow cooked soup stock (remember to use seaweed!) and in addition work a bit on the velocity, you will get great results!
Second; if you pair the soup with a lovely sourdough bread and add a bit fermented veggies and a sprinkle of roasted seeds, herbs and seaweed salt, the humble soup becomes a royal dish. I can´t really think of a better and more sustainable meal.

Roasted cauliflower/potatoes/onion/garlic
Nordic dashi
A bit of creamed coconut milk
Shoyo roasted sunflower seeds
Dried paprika powder
Smoked seaweed salt
