My parents had an almond tree in their garden, and I have fond memories of my father up on a ladder, picking some almonds for us, then braking them open to eat them fresh.
But it's dried and roasted to perfection that nougat needs, so that's how they make it into my nougat.
You'll find them on their own in the Almond Nougat bars, or combined with other fruits and nuts, because like Romeo and Juliette, our nougat would be sad without its almonds.

There's so much going on in our Royale nougat,
every bitesize piece will give you a different experience

you might get the pistachio with some cranberry,
or you might experience the almond with the apricot,
or again the hazelnut with cranberry and apricot
or all of it at once,
the combinations are endless and it is a titillating experience

nothing is better than finishing your coffee with a bitesize gourmet nougat piece, any flavour will do,
That one treat a day is sooo fine that you'll have to let your eyes roll back and let that 'yummmm' sound come out, who care who will hear you!

Recently, I've been wanting to plant a fig tree in my garden, I'll admit I haven't gotten round to it yet. But it made me wonder when was the last time I made Almond and Fig nougat.
Well, according to my records, the last batch I made was in April 2025, way to long ago, don't you think?
So I made a new batch yesterday. It probably will be the only one this year, so if you fancy this flavour, it is now available via my website (link in bio)

It is finally available online as well as at the markets!

Our chai & macadamia nougat may have taken its inspiration from Chai latte, but has now found its own personality.

Indeed, the combination of macadamia nuts, with their rich creamy undertone, give enough crunch to balance the carefully selected amount of spices we add to our chai mix.

As ever with our nougat, it's all about the balance of flavours and the after taste.

So you should expect to taste an harmonious blend of ginger, cardamon, nutmeg, pepper, cinnamon, and vanilla (to name a few), yet still get that nougat experience with its soft and chewy texture, and the underlying taste of honey.
