Wild Heart Blackberry Prosecco Pavlova Bombs
Ingredients
For the Main Component:
4 large egg whites, room temperature
1 cup superfine granulated sugar
1 tsp cornstarch
1/2 tsp cream of tartar
1 tsp pure vanilla extract
For the Secondary Component:
2 cups fresh blackberries
1/2 cup Prosecco (extra dry preferred)
2 tbsp granulated sugar
1 tsp lemon zest
For the Sauce / Layer / Topping:
1 1/4 cups heavy whipping cream, chilled
2 tbsp powdered sugar
2 tbsp Prosecco reduction (from the berry syrup)
1/4 cup dark chocolate, melted (for lining)
For Garnish (optional):
Fresh thyme sprigs or micro-mint
Edible purple flower petals
1 pinch blackberry dust (crushed freeze-dried berries)
Directions
Preheat oven to 300°F. Line a baking sheet with parchment paper.
In a clean glass bowl, whisk egg whites and cream of tartar until soft peaks form. Gradually add superfine sugar one tablespoon at a time, whisking on high until the meringue is stiff, glossy, and holds its shape.
Fold in the cornstarch and vanilla.
Spoon the meringue into 8 "bombs" on the parchment. Use a spoon to create a deep well in each, pulling the edges up into wild, jagged peaks.
Place in the oven and immediately reduce the heat to 225°F. Bake for 60 minutes. Turn off the oven and let them cool inside completely for at least 3 hours.
While the pavlovas bake, combine blackberries, Prosecco, and 2 tbsp sugar in a small saucepan. Simmer over medium-low heat for 12 to 15 minutes until the liquid reduces by half and berries are glossy.
Strain out 2 tablespoons of the Prosecco syrup into a small bowl and set aside to cool. Let the remaining berries and syrup cool completely.
Brush the inside of the cooled meringue bombs with a thin layer of melted dark chocolate to keep them from getting soggy.
Whip the heavy cream with powdered sugar and the 2 tablespoons of cooled Prosecco reduction until stiff peaks form.
Fill the chocolate-lined bombs with the Prosecco cream and top with the boozy blackberries. Garnish with thyme and purple petals.
