Rooted in the heart of Balayan, Batangas, our pastillas trace their origin to our great-great-grandmother - a recipe preserved through stories passed down by our elders, Patricia Bay Marajas of Sto. Tomas, Batangas, and Angelina Bay-Mendoza Parto of Hilltop, Batangas City.

Originally crafted using cassava and coconut milk, this delicacy has evolved through time while honoring its authentic roots. Today, it is made with kamote (sweet potato) and milk, creating a soft, creamy texture, and naturally sweet flavor that has become our signature.

Through generations, the Bay-Mendoza family has kept this tradition alive - and now, a mother-and-daughter team continues the legacy.
