Brownie Bottom Mini Cheesecakes

Ingredients:

For the Brownie Base:
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt

For the Cheesecake Layer:
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract

Instructions:

1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.

2. In a large bowl, whisk together the melted butter, sugar, eggs, and vanilla extract until smooth.

3. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

✅Ingredients:

- 4 large eggs
- 120 grams (1 cup) all-purpose flour
- 120 grams (1/2 cup) granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 tablespoons milk
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract

Instructions:

1. Preheat your oven to 180°C (350°F). Grease and line an 8-inch round cake pan with parchment paper.

2. In a large bowl, sift together the all-purpose flour, baking powder, and salt. Set aside.

Fruity Jelly Dessert

Ingredients:
1 can fruit cocktail 825 g
1 1/2 cups of water
1 sachet vanilla flavor jelly powder ( can use agar agar or gelatin powder) refer
to its package instruction how much liquid ang kailangan. (gamit ko ae 900ml ang pwd)
2 cups of fresh milk or evaporated milk
1 can condensed milk
2 tbsp cornstarch

•Prepare the fruit cocktail by removing its water.( you can slice it if you want) set aside.
•Dissolve jelly powder/ agar powder in 1 1/2 cups water
•Add the evaporated milk,condensed milk and cornstarch.
• Bring to a boil while stirring continuously
•Remove from heat, then add the fruit cocktail.
•Transfer right away into the molder
•Let it set. and Chill.

ARROZ VALENCIANA RECIPE

INGREDIENTS:

3cups Glutinous Rice (malagkit)
2 cups Pork or chicken sliced or shrimp
1 cup pork, beef or chicken liver, sliced into small cubes
2 pieces Chinese sausage, sliced
1 large red bell peppers, sliced into small cubes
1 cup Green Peas
2 small boxes Raisins
2 pcs. onion, minced
4 cloves garlic, minced
salt and ground pepper to taste
2 pcs. chicken bouillon/broth cubes (optional)
1 tablespoon turmeric powder or fresh
4 pcs. hard-boiled eggs, peeled and sliced Spring onions
Oil
Water
Coconut milk (optional)

INSTRUCTIONS:

1. Wash glutinous rice twice and drain water. In a rice cooker or pot, add washed rice then add 2 and ½ cups water (or depending on the variety of rice you have).
2. Add and dissolved turmeric powder and 1 broth cube in the pot with rice. This will give the rice a flavour. Start cooking it just like cooking regular rice. Once cooked, set aside.
3. In a large pan, brown pork or chicken in its own oil then saute-in garlic and onions until fragrant.
4. Add liver, Chinese sausage, red bell pepper, green peas and raisins. Season with salt and pepper to taste.
5. Once the meat are cooked, add it to the cooked malagkit rice and combine it well.
6. Continue cooking over low heat for about 5 minutes then remove it from heat. Sprinkle with chopped spring onions.
7. Serve and garnish with sliced boiled eggs on top.

2 large eggs

For the Blueberry Cheesecake Filling:

8 oz mascarpone cheese
8 oz cream cheese, softened
½ cup + 2 tablespoons caster sugar
2 tablespoons corn starch
2 large eggs
1 teaspoon vanilla extract
1 ⅔ cups fresh blueberries
For the Glaze:

½ cup powdered sugar
2-3 teaspoons milk (or cream)
Instructions:
1. Prepare the Oven and Pan:

Preheat your oven to 350°F (175°C). Line the bottom of a 9-inch springform pan with parchment paper, then spray the bottom and sides with nonstick cooking spray. Set aside.
2. Make the Crumb Cake:

In a large bowl, stir together flour, baking powder, salt, brown sugar, sugar, and lemon zest (if using).
Add the cold butter to the dry ingredients. Work it in with your hands, a fork, or a mixer until the mixture resembles coarse crumbs.
