What I particularly like
1. The wheelset is a much better visual match.
The polished/silver rims and hubs work extremely well with the champagne/titanium-colored steel frame, silver cockpit, fork and Brooks components. It looks much more intentional than a generic black wheelset.
2. 700×38c is an excellent tire size.
The WTB Venture 38c gives you a very good middle ground:
Fast enough on pavement
Comfortable on rough roads
Capable on gravel
Good for long-distance riding
3. GRX 1×11 is appropriate for this bike.
The RX600/RX812 combination gives it a practical gravel/touring character rather than turning it into an overly aggressive race bike.
4. The Brooks B17 + steel frame is a great combination.
This is where the build really stands out. You're prioritizing long-distance comfort and durability rather than chasing an ultra-lightweight number.
One thing I would change
The biggest weakness is weight.
At roughly 10.3–10.6 kg, it's respectable for a steel gravel/touring bike, but you could probably bring it closer to 9.7–10.0 kg without destroying the character of the build.
I'd target weight reduction mainly through:
lighter wheelset
lighter cassette
lighter cockpit
lightweight saddle only if you're willing to sacrifice some Brooks character
I wouldn't change the frame, 38c tires, GRX drivetrain or carbon fork just to save a few hundred grams.
Bottom line
This isn't a pure gravel-race bike. It's better described as a premium classic all-road/touring bike.

My verdict: 9.5/10 — I'd keep this configuration. The silver wheelset actually makes the entire build look more cohesive and premium.
