It's Wednesday. The coffee has already done its job. ☕️ Now what?

Our dark chocolate bark with salt might just be the midweek boost you need. 🍫

Dark chocolate is naturally rich in plant compounds called polyphenols. Research suggests that these compounds help increase blood flow to the brain and support cognitive function. In a 2024 review, researchers noted that cocoa flavanols (flavanols are a subcategory of polyphenols) have shown potential benefits for attention, memory, executive function, and overall brain health.¹

Remember though, not all dark chocolates are 'dark'. Some are mostly sugar and additives (BTW, if you haven't yet, you need to check our post from yesterday to understand this part fully.) So, to finish the week strong, eat the right kind of dark chocolate, maybe even with salt this time 😃

P.S. Consuming dark chocolates high in sugar (mostly CHOCOLATE CANDIES) causes sugar spikes and crashes and has fewer health benefits. Not something we want in the long run, yeah?

“DARK CHOCOLATE” is not a guarantee. Turn the bar around and read the ingredients list. Who exactly is the main character? Cacao? Sugar? or additives? When reading the ingredients list, note that the ingredients are listed BY WEIGHT in DESCENDING order. 💡

When the ingredients list starts with sugar (& even more refined sugar because they can come in different names 😱), with the presence of substitutes (e.g. vegetable oil) and additives (insert artificial flavors), this means the experience is going to be built around sweetness and consistency. Not the healthiest option, really.

But, that’s okay, because that is the role they are meant to play. In most cases, they are not even called “real chocolate” but “CHOCOLATE CANDY”.

Craft chocolates, like our brand, is typically made with fewer ingredients and more cacao content, allowing the natural flavors of the cacao to shine through. So if you want a REAL dark chocolate and the health benefits that come with it, you’re probably better off with a chocolate like ours.

The next time you pick up a chocolate bar, take a moment to read the ingredients before buying. Sometimes, understanding chocolate starts before tasting it.

The weekend is upon us but let's not forget Friday night. Maybe the best part of Friday night is FRI-NALLY slowing down enough to savor the evening, finding comfort in the familiar things, and rewarding yourself for making it through another week.

Our Nibs ’N’ Creme is our take on the childhood favorite we all grew up loving, but elevated with roasted cacao nibs for a little more texture and character. Something familiar, comforting, and definitely rewarding.

Monday is here! 🤎

And if Mondays had a flavor, it would taste a lot like our Cocoa Crunch. Our 61% Dark Milk chocolate bark studded with crunchy roasted cocoa nibs that brings together notes of malt, toffee, and chocolate cake in every bite. 😋

Every piece feels like a reset, like having your favorite cereal every morning except for this one, you don't really need a bowl and a spoon to eat it with! But, a glass of milk on the side may not be a bad idea though. 🥛

Throwing it back to August 2022, when we first dipped our toes into making chocolate barks. 🍫

At the time, we simply wanted to offer something new for the holidays alongside our chocolate bars. We thought chocolate barks would look good in a gift set. So chocolate barks it is!

We started with what we had within arm’s reach at home: Some marshmallow “charms” found in the Lucky Charms cereal, p**o seko, banana chips, macadamia nuts, pumpkin seeds, lady fingers, locally sourced fruits that we dehydrated, and even the crispy sugary edges of the turon wrapper. Anything we thought was interesting! We tempered some chocolate on a flat surface and scattered each topping by hand, like a giant mendiant. We intentionally kept the toppings separate at first, to make sure each ingredient is judged on its own merits when paired with our chocolate. Nothing too serious at first but soon, we found ourselves testing different combinations and trying out more toppings. 😋Some combinations worked instantly, some absolutely did not! 🤣

A few more testing and lots of tasting later, we had created 5 bark variants in September. Naming them became a whole adventure on its own, lots of overthinking, brainstorming and laughing 😅 We finally launched them during our pop-up booth on October 22, 2022 and people loved them (yay!!).

Not long after, we realized we did not want our barks to exist only during special occasions. We wanted them to become part of people’s everyday moments, during the in-betweens.

Our five chocolate bark flavors became🎵 Christmas in our Barks 🎶 & our Nibs ‘N’ Creme, our only white chocolate variants,
Mac & P’s, Tibuok sa Dilim, and Cocoa Crunch
