Red Velvet Cup Cake 🧁🧁🧁

Ingredients:

For the Wet Ingredients:

1 cup Evaporated milk (Fresh milk can also be used) add 1 Tbsp Lemon juice or White Vinegar, set aside for at least 5 minutes
1 cup Brown sugar
1/2 cup white sugar
2 pcs Eggs (Large)
1/2 cup Canola oil
1 tsp Vanilla
1 Tsp Red food color
1/2 cup warm water

For the Dry Ingredients:

1 1/2 cup All-purpose flour
1 tsp Baking powder
1/2 tsp baking soda
Pinch of Salt
1 Tbsp cocoa powder

Instructions:

1️⃣ Prepare Wet Ingredients:

Mix evaporated milk with lemon juice or vinegar and set aside. Combine brown sugar, white sugar, eggs, canola oil, vanilla, red food color, and warm water.

2️⃣ Prepare Dry Ingredients:

Combine all-purpose flour, baking powder, baking soda, salt, and cocoa powder in a separate bowl.

3️⃣ Combine Ingredients:

Mix the dry ingredients into the wet mixture. Rest the batter for at least 5 minutes before baking.

4️⃣ Bake:

Bake in a preheated oven at 160°C for 25 minutes. Yields 16 cupcakes (3oz each).

Moist Chocolate Cupcakes

Ingredients:
* 3/4 c + 2tbsp All-Purpose Flour
* 3/4 tsp Baking Powder
* 3/4 tsp Baking Soda
* 1/4 c + 2 tbsp Cocoa Powder
* 1/2 c Sugar
* Pinch of Salt
*1 pc Egg
* 1/2 c Evaporated Milk
* 1/4 c Oil
* 1/2 tsp Vanilla Extract
* 1/2 c Hot Water

Procedure:
1. Mix all the sifted dry ingredients. Set aside.
2. In another mixing bowl, combine all the wet ingredients except the hot water.
3. Make a well at the center. Add the wet mixture unto the dry ingredients gradually.
4. Mix until smooth or no lumps visible.
5. Add the hot water and mix until well blended. Do not over-mix.
6. Put the batter on the prepared cup liners.
7. Bake at pre-heated oven for 15-20 minutes (140-160 C).
8. It's done when the inserted toothpick comes out clean.

Carrot Cake

Ingredients:
2 cups all-purpose flour
2 tsp baking powder
2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 cups grated carrots (about 6-7 medium carrots)
1 cup vegetable oil
4 large eggs
2 cups granulated sugar
2 tsp vanilla extract
1 cup chopped walnuts or pecans (optional)
For the cream cheese frosting:
8 oz cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar
1 tsp vanilla extract
Instructions:
Preheat your oven to 350°F (180°C) and grease a 9x13 inch baking dish.
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
In a separate large bowl, mix together the grated carrots, vegetable oil, eggs, sugar, and vanilla extract until well combined.
Add the dry ingredients to the wet ingredients and mix until just combined. Fold in the chopped nuts (if using).
Pour the batter into the prepared baking dish and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
While the cake is baking, make the cream cheese frosting. In a large bowl, beat together the cream cheese and butter until smooth. Gradually add in the powdered sugar and vanilla extract, beating until the frosting is smooth and creamy.
Once the cake has cooled completely, spread the frosting evenly over the top of the cake.

LEMON TRUFFLES

Ingredients:

* 1 cup white chocolate chips
* 2 tablespoons unsalted butter
* 1/4 cup heavy cream
* Zest of 2 lemons
* 2 tablespoons fresh lemon juice
* 2 cups powdered sugar
* Yellow food coloring (optional)
* Lemon zest or yellow sprinkles for decoration (optional)

Instructions:

1. In a heatproof bowl, combine the white chocolate chips and butter.

2. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Pour the hot cream over the chocolate and butter mixture. Let it sit for a minute to melt the chocolate, and then stir until smooth.

3. Add the lemon zest and lemon juice to the chocolate mixture, stirring well.

4. Gradually add the powdered sugar, stirring continuously, until the mixture is smooth and well combined. If you want a more vibrant yellow color, you can add a few drops of yellow food coloring.

5. Refrigerate the mixture for about 2 hours or until it’s firm enough to handle.

6. Once the mixture is firm, use your hands to roll small portions into truffle-sized balls. If the mixture is too sticky, you can dust your hands with powdered sugar.

7. Optional: Roll the truffles in additional lemon zest or yellow sprinkles for a decorative touch.

8. Refrigerate the truffles for at least 30 minutes before serving.

Chocolate Raspberry Cake Delight 🍫🍓

Ingredients:

Raspberry filling:

1.5 tablespoons of water
1.5 tablespoons cornstarch
3 cups fresh or frozen raspberries
1/3 cup granulated sugar
1 teaspoon lemon juice
1/2 teaspoon pure vanilla extract
Dark chocolate cake:

1 and 3/4 cups all-purpose flour
3/4 cup unsweetened natural cocoa powder
1 and 3/4 cups granulated sugar
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1/2 cup vegetable oil
2 large eggs
3/4 cup full-fat sour cream
1/2 cup buttermilk
2 teaspoons pure vanilla extract
1/2 cup hot water or black coffee
1 cup mini semisweet chocolate chips
Chocolate buttercream:

1 cup unsalted butter, softened
3 and 1/2 cups confectioners' sugar
1/2 cup unsweetened natural or Dutch cocoa powder
3 tablespoons heavy cream or milk
1/8 teaspoon salt
2 teaspoons pure vanilla extract
Chocolate and raspberry ganache:

8 ounces quality semisweet or bittersweet chocolate, finely chopped
3/4 cup heavy cream
1/4 cup raspberry liqueur (optional)
Instructions:

Start with the raspberry filling by whisking corn and water together. Combine with raspberries, sugar and lemon juice in a saucepan over medium heat. Once boiled, remove from heat and stir in vanilla extract. Let it cool.
For the cake, mix dry ingredients in a bowl. In another bowl, mix oil, eggs, sour cream, buttermilk and vanilla. Combine wet and dry ingredients, then add hot water or coffee. Folded in chocolate chips. Pour batter into cake pans and bake at 350°F for 24-26 minutes.
Prepare the chocolate buttercream by beating the butter until creamy. Add sugar, cocoa powder, cream, salt and vanilla. Beat until smooth.
For the ganache, pour hot cream (and liqueur if using) over chopped chocolate. Stir until smooth.
Assemble the cake by layering with raspberry filling and buttercream.

Salted Caramel Chocolate Cake

Ingredients

For the chocolate cake:

2 cups granulated sugar

1 cup light brown sugar, packed

2 and 3/4 cups all-purpose flour (not packed!)

1 and 1/2 cups unsweetened cocoa powder, sifted

3 teaspoons baking soda

1 and 1/2 teaspoons baking powder

1 and 1/4 teaspoons salt

3 large eggs + 2 large egg yolks, at room temperature

1 and 1/2 cups full-fat sour cream

1/3 cup whole milk

3/4 cup vegetable oil (you may also sub in melted coconut oil)

2 tablespoons vanilla extract

1 and 1/2 cups hot water

For the salted caramel chocolate frosting:

2 cups unsalted butter (4 sticks, 16 ounces), VERY soft

4 and 1/2 cups confectioners' sugar, sifted

3/4 cup unsweetened cocoa powder, sifted

1 teaspoon vanilla extract

1/2 teaspoon salt

3 tablespoons heavy cream (more if needed)

2 tablespoons salted caramel sauce

Garnish:

1 and 1/4 cups salted caramel sauce

Flaky sea salt

Instructions

For the chocolate cake:

Preheat oven to 350°(F). Cut out three 9-inch round segments of parchment paper to line your cake pans with. Spray each pan generously - sides and bottom - with nonstick cooking spray, then place the parchment paper cut out in the bottom of the pans and spray again. It's important to make sure every bit of pan and paper are sprayed so your cakes don't get stuck. Set pans aside.

In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl using a handheld electric mixer, combine both sugars, flour, cocoa powder, baking soda, baking powder and salt; mix on low until dry ingredients are thoroughly combined. Use your hands to break up any large clumps, if needed.

In a separate bowl combine the eggs, egg yolks, sour cream, milk, oil and vanilla extract; mix until completely combined. Pour mixture into the dry ingredients and beat on low until just incorporated. Pour in hot water and continue mixing until completely combined; about 1 minute. The batter will quite thin.

Divide batter evenly among prepared pans. Bake in preheated oven for 30 minutes, or until a wooden toothpick or cake tester inserted in the center of a cake comes out clean or with just a few moist crumbs attached. Cool cakes for 10 minutes in the pan before removing from pans and transferring to a cooling rack; cool cakes completely before frosting.

For the chocolate frosting:

In a stand mixer fitted with the paddle attachment, cream the softened butter on medium-speed until completely smooth; about 3 minutes.

Turn the mixer off and sift the powdered sugar and cocoa into the mixing bowl. Turn the mixer on the lowest speed and mix until the sugar/cocoa have been absorbed by the butter; about 2 minutes. Increase mixer speed to medium; add in vanilla extract, salt, heavy cream and salted caramel; beat for 3 minutes. If your frosting appears a little too thin, add a little more confectioners' sugar; If your frosting needs to be thinner, add additional heavy cream, 1 tablespoon at a time.

Using a serrated knife, carefully trim the raised top of each cake, making each one an even, level surface. Transfer 1 layer to a large plate or cake stand. Spread a thin layer of frosting on top, then add a 1/2 cup of caramel; top with another cake layer, and repeat, thinly spread it with a layer of frosting, then adding a 1/2 cup of caramel. Top final cake layer and place cake in the fridge to set for 1 hour. Once set, finishing frosting the top and sides of the cake. Sprinkle with sea salt. Slice and serve, or keep refrigerated for up to 5 days.

BUTTER CAKE RECIPE

🌟 INGREDIENTS

◾️2 large eggs
◾️125 grams of flour
◾️125 grams of sugar
◾️½ cup of vegetable butter
◾️½ cup of milk
◾️1 tablespoon vanilla or orange essence
◾️1 tablespoon baking powder
◾️½ teaspoon of salt

🌟 PREPARATION

◾️Preheat the oven to 180°c and place the paper cups in the shortbread mold.

◾️In a container, place the flour and baking powder, then reserve it.

◾️In another container, beat the sugar and the eggs until all the sugar has completely dissolved.

◾️Proceed to add the milk, the vanilla/orange zest and thoroughly mix together.

◾️Add oil gradually and slowly, while you mix until you achieve a uniform and homogeneous mixture.

◾️To this mixture, add the flour mixture along with ½ teaspoon of salt.

Keep mixing, but not as much

◾️Then let it rest for about 15 minutes.

◾️Pour the batter to the mold that you already have ready.

◾️Bake for 20 minutes in the oven.

◾️Let them cool for a couple of minutes and they are ready to be eaten.
