Peach Garden tart is a cake that feature our premium Korean yellow peach, poached gently in a syrup that concentrates its flavour and softens the fruit. It is complemented by candied hawthorn fruits added to an almond milk mousse made with a mixture Southern and Northern apricot kernels, thickened with Jasmine rice and sweetened with rock sugar, just as traditional almond milk is prepared. Encased within this silky mousse is a surprise in the form of a popping sphere of peach and hawthorn.​​​​​​​​

Korean Muskmelon entremet 🍈
Topped with a thin blanket of Musk melon, the entremet holds a luxrious slice of korean muskmelon with two alternating layers of Almond Joconde and korean sweet rice mousse. The melon seed granola base gives the entremet a crunchy texture.

Korean White Peach Petit Gateaux 🍑
This gateaux is more than meets the eye. Assembled with white peach and raspberry mousse, the realistic peach contains a surprise inside – a boozy Korean White Peach and Makgeolli compote.

Using the freshest Korean Produce from .sg, the muskmelon 🍈 dessert along with the White Peach Petit Gateaux 🍑 uses premium airflown fruits from Korea.

Le Matin Pâtisserie – a two year-old bakery that has since earned an almost cult-like following for his exquisite refined edible works of art.

You can look forward to Chef Matin’s creative use of Korean muskmelon and Korean white peaches. The local talent who has trained in some of the world’s finest kitchens is known for his inventive use of ingredients. In a Korean Muskmelon entremet, the melon boasting high sugar content and a distinct perfume is crafted into sliced melon “flowers”. This crowns an assembly of mousse of sikhye (sweet Korean rice drink) layered with almond joconde sponge and compressed melon. Maximising the use of the prized melon fully, Chef Matin even works the melon seeds into a crunchy granola base for the entremet. In the Korean White Peach Petit Gateaux, he applies the same zero-waste approach to craft a mousse out of the peach kernel, assembled with white peach and raspberry tartare.
