CHA CHA CHA 茶茶茶 🫧🍵🪩

We’re switching things up next Saturday 19th September at Tiong Bahru with something a little different — naturally sparkling tea from Chengdu, China.

Meet tazaTe Sparkling Tea 大地茶场. They take tea leaves, herbs and botanicals sourced from organic farmers across China and turn them into something rather unexpected: complex, naturally sparkling teas made through a long two-stage fermentation process inspired by the traditional method used in Champagne.

The teas are built around leaves mainly from Yunnan, layered with different Chinese herbs and botanicals. Think tea, but with bubbles, texture, complexity and plenty to explore — and absolutely no alcohol.

Co-founder Nicholas Zhang will be joining us for the afternoon to pour a few new cuvées (first time in Singapore!), talk us through how they’re made, and have a chat about all things tea (or not). 😆

2 months ago, Wildflower closed their doors at their beloved Brompton St cellar door in Marrickville, NSW. While this chapter has come to an end, Chris and Topher are planning a return in a smaller more rural form. Meanwhile, we’ve got our hands on the last beers from their cellar door. Part 2 of this series features their fruit-based series as well as some collab brews.

Last weekend in Jura with Kenjiro-san and Mayumi-san from Domaine des Miroirs. ☁️☁️☁️

It was so lovely to see them again (and converse in broken Japanese and French 😂). We picked Chardonnay for their cuvée Sonorité du Vent — lots of grapes, plenty of squats, and a healthy dose of sunshine.

Harvest was in full swing across the Jura. Some producers were holding off, waiting for the rain expected on Thursday before getting stuck into their picking.

Lunch was great but of course the real treat here is the wines from Domaine des Miroirs. Lovely fresh Poulsard 23 😙 Then picking resumed in the afternoon. We can only hope that we get to try the wine we contributed to when it’s ready in years to come. 💙💙💙

And just like that, harvest here in Uchizy is done.

We wrapped up 2026 harvest with Pierre Mang here in the south of Burgundy, on Wednesday, 26th August — the earliest harvest he’s ever experienced. This time last year, he hadn’t even started yet.

It was so good to be back again this year, catching up with familiar faces and meeting some new ones along the way. And of course, enjoying the blind tastings at every meal 😆

Most producers here in the Mâconnais have already finished harvest, while some of our friends just 1 hour away in other parts of Burgundy and Jura are still right in the thick of it. It’s funny how the landscape, climate and rhythm can feel so different. And, of course, the wines are different too.

In the next couple of days we’re heading north to the Hautes-Côtes de Beaune. Stay tuned for more 🍇 grape 🍇 updates.

Domaine Dandelion, a little Burgundy secret 🤫🍷

Or if you’re in the know of the who’s who in the wine scene then perhaps isn’t a secret anymore. Join us for an intimate tasting of Domaine Dandelion, one of the exciting young names coming out of Burgundy’s Hautes-Côtes de Beaune.

Based in Mavilly-Mandelot, Domaine Dandelion is the tiny domaine of Morgane Seuillot and Christian Knott, working just a few hectares of vines across the Hautes-Côtes. Christian, an Australian transplant to Burgundy, brings years of experience from his time as cellar master at Chandon de Briailles.

The Hautes-Côtes is cooler and higher than the more famous vineyards below, with some of Dandelion’s parcels sitting at over 420 metres. The altitude and later ripening lend the wines a beautiful freshness: bright acidity, elegant aromatics and a subtle mineral edge.

In the vineyards, all the work is done by hand and horse, while in the cellar they favour a gentle, low-intervention approach, including whole-cluster fermentation and no additions (no sulphur, no nothing).

The result? Wines that are precise, energetic and remarkably expressive of their cool-climate terroir. And because this is Burgundy, quantities are tiny.

Harvest isn’t just about picking grapes ✂️🍇 ⏭️⏭️⏭️

It’s starting early before the sun is out. Sometimes that means getting to the vines by 6.30am.

Getting that cardio in. Some plots are steeper than others.

And lots of squats. It’s a work out.

Appreciating what Mother Earth has for us

And realising that wild animals also appreciate it 👅

More beautiful bunches

Also witnessing the impact of global warming 🥴 This harvest has started way earlier than in the past too.

Getting your hands and feet dirty

But you get to experience amazing views and tranquility

Harvest 2026 is in full swing! 🍇✂️

The crazy heat and drought have brought harvest forward this year, so some of us are currently in France getting our hands (and shoes) dirty.

Back home, both our Bukit Timah and Tiong Bahru shops are open as usual, and deliveries are rolling along too. 🍷🙂

If you’ve only recently found us through our tiny new Tiong Bahru outpost, hello! 👋

We thought we should probably mention that Temple Cellars has actually been around for a little while. Nine years actually.

Our first home is tucked away in Binjai Park, Bukit Timah, and unlike our tiny Tiong Bahru sibling, the OG has a little more room to breathe.

We’ve got a walk-in wine cellar with plenty more bottles to explore, beer fridges, a sake selection for when wine isn’t quite the answer, plenty of zero-alcohol options, and of course, lots of minimal intervention wines.

So if you live around the area, fancy browsing a few more bottles, or simply want more things to drink, come visit us in Bukit Timah.

We’re dog friendly too. 🐶
