A simple, delicious, Friday night meal - it's got to be a Pork Red Curry. Packed full of spicy flavours that will transport you straight to the food markets of Thailand, it's definitely not one to be missed. Check out this easy recipe below, and remember to tag us in your creations 🙌
Ingredients:
- Vegetable or soybean oil
- Mae Ploy Red Curry Paste
- 360ml coconut milk
- 200g pork belly chopped into large pieces
- 50g vegetables of your choice
- 45g sugar
- Salt and pepper, as required
- Fresh chillies, to garnish
Method:
1. Stir-fry 50g of Red Curry Paste in 1 tablespoon of your chosen oil, then add 240ml of coconut milk. Add the pork belly, and allow it to cook until the pork has turned white.
2. Add the remaining coconut milk and around 150ml of water, and allow the mixture to come to a boil. Once boiling, add your vegetables and cook until soft.
3. Add the sugar, and any further seasoning you may require. Garnish with fresh chillies, and enjoy!
