🌧️ A Note About Our Organic Onions During Rainy Season 🌧️
To customers who ordered onions from us: we would like to share some important information about our organic onions from our Mae Wang farmers.
Our onions are grown naturally without fungicides or chemical pesticides. During this rainy season in Chiang Mai, the humidity has been especially high, making it harder for onions to dry properly after harvest. As a result, you may notice some black mold developing on the outer skin of the onions.
💡The good news is that this can usually be handled safely during preparation. With thanks to TUCK the CHEF - เชฟทักษ์ for the helpful recommendations, here’s how we suggest preparing onions if you see black spots:
🧅 How to Handle Black Mold on Onion Skin
- Before peeling, soak the onion briefly in water to help prevent mold spores from spreading around the kitchen.
- Peel away and discard the affected outer layers.
- For extra safety, you can remove one additional clean layer underneath.
- Wash the remaining onion again before cooking — plain water, vinegar water, or baking soda water all work well.
❄️ Best Storage Method (Highly Recommended During Rainy Season)
To help prevent mold and extend freshness:
- Store onions and garlic in the refrigerator.
- The best spot is the coldest area above freezing (around 0–2°C), such as under the freezer compartment.
- Avoid the vegetable drawer, as moisture there can speed up spoilage.
- Place onions in a zip-lock bag with 1–2 sheets of kitchen paper inside to absorb moisture.
This method can help keep onions and garlic fresh for up to a month with much less mold and weight loss.
**** You can refrigerate them either with the skin on, or peeled and washed beforehand. ****
☝🏼 If You Prefer Not to Refrigerate
Store onions in a breathable mesh bag away from direct sunlight and hang them in a well-ventilated area. However, during very humid weather, mold can still develop easily, so we recommend peeling the moldy parts out and use the inside and/ or buying only what you can use within a short time rather than storing large amounts.
