Today we are sharing this curated sauce by Mea-Lynn that works with most of your Seafood. Its versatility knows no bounds so be sure to shop the ingredients and give it a try this week.

Yummy ginger scallion sauce over fried branzino but any white fish / seafood will work too

Ginger Scallion Sauce 🌶️

• 4–5 scallions, thinly sliced
• 2–3 tbsp fresh ginger, chopped
• 4 garlic cloves, chopped
• A few Thai red chilies, thinly sliced (optional)
• 4 tbsp avocado oil
• 3 tbsp soy sauce
• 1½ tbsp rice vinegar
• ½ tbsp sesame oil
• 1 tbsp garlic chili crisp (optional)
• 1 - 2 tbsp honey
• Handful of fresh cilantro, roughly chopped

Heat the avocado oil in a small pan and fry the ginger and garlic until fragrant (4-5 minutes). Pour the hot oil, ginger and garlic directly over everything in the bowl and mix.

We love this ONE PAN GREEN FISH CURRY recipe from Jessica Sepel - JSHealth® 🧿🧿🧿 ✨

Proof that a weeknight (or weekend) dinner doesn’t need to be complicated.

You have to try this version!

Ingredients
2 tbsp green curry paste
1-2 tsp fish sauce
400g (14.1 oz) tin coconut milk
3 kaffir lime leaves, optional
1 cup frozen peas, blanched
½ head broccoli, in florets
1 carrot, in sticks
2 white fish fillets, we use barramundi

To serve:
1 cup cooked rice
1 red chili, finely sliced
1 lime, juiced
2 spring onions, chopped
⅛ bunch coriander (cilantro), leaves picked

Method
Preheat the oven to 350°F (180°C).

Combine the green curry paste, fish sauce and coconut milk in an oven-proof dish. Whisk together until smooth.

Add in the kaffir lime leaves and the vegetables, followed by the fish fillets.

Cover with a tight-fitting lid and bake for 10 minutes. Remove the lid and cook for a further 10 minutes.

Remove from the oven and squeeze the lime juice over the top.

Serve with rice of choice, fresh chili, spring onions, and coriander leaves.

Time to cook: 25 minutes
Serves: 2

This is what we call a SNACK of all snacks!! Shared by this Spicy Shrimp Rangoon nachos 🌶️🍤

Golden crispy wonton chips filled with creamy shrimp Rangoon and finished with spicy sauces… addictive and indulgent!!

Ingredients:
Filling:
* 9 oz / 250 g shrimp, peeled & deveined
* 8 oz / 225 g cream cheese
* 2 green onions, finely sliced
* 2 cloves garlic, very finely minced
* 1 tsp soy sauce
* 1 tsp sugar
* 1 tsp sesame oil
* Salt and pepper
* 1 tsp hot sauce
* 1 tsp chili flakes
* 1 tsp ponzu (optional)
* ¼ tsp MSG (optional)
* Wonton wrappers (I used wrappers labeled for frying, but regular wonton wrappers work too)
* Water for sealing
* Neutral oil for frying

* Toppings:
* Sweet chili sauce
* Chili mayo
* Green onions
* Fresh green chili (sliced)
* Black sesame seeds + white sesame seeds

Instructions:
1. Cook the shrimp: Cook shrimp in a pan with a little salt and pepper until just pink (don’t overcook). Remove and pat completely dry with paper towels.
2. Chop finely: Chop the shrimps
3. Make the filling: In a bowl, mix shrimp with cream cheese, garlic, green onions, soy sauce, ponzu, MSG, sugar, pepper, hot sauce, and chili.
4. Fill & seal: Add about 1–1½ tsp filling per wonton. Seal tightly with water or and press out any air.
5. Freeze: Place filled wontons in the freezer for 20–30 minutes until firm (not rock solid).
This helps prevent bursting when frying.
6. Fry: Heat oil to 340–350°F (170–175°C).
Fry in small batches for 2–3 minutes until golden and crispy.
7. Serve: Drizzle with chili mayo and sweet chili sauce. Top with fresh green chili, and a mix of black + white sesame seeds. Enjooy🫶

Ingredients:
200g Shrimp (Raw weight)
½ Tbsp Minced Garlic
1 Tsp Grated Ginger
5ml Sesame Oil
1 Tsp Salt
1 Tsp White Pepper
1 Tsp Corn Starch
Green Onions
3 Rice Paper Sheets (Thin)
Sesame Seeds

Sesame Oil Soy Sauce:
3 Tbsp of soy sauce
½ Tsp of sesame oil
Pinch of chili flakes/gochugaru

Instructions:
1. Into a bowl combine the following ingredients: 200g Shrimp (Raw weight), ½ Tbsp Minced Garlic, 1 Tsp Grated Ginger, 5ml Sesame Oil, 1 Tsp Salt, 1 Tsp White Pepper, 1 Tsp Corn Starch
2. On a medium high heat pan, spray with cooking spray and place about 1 Tbsp of the filling mixture, leaving ample space around each one.
3. Wet the rice paper sheet and cut into quarters. Overlap two pieces, place on the shrimp mixture and pinch to ensure it bonds to the mixture.
4. Once all the fillings have been covered, add a splash of water and steam until the mixture is cooked through (took around 5-7mins) or until all the liquid in the pan has evaporated.
5. Top with green onions, sesame seeds, soy sauce mixture and enjoy!
