Traveling from Hong Kong, Mandy brought with her more than technical expertise — she brought a story in every creation. Each dessert reflected her philosophy: that pastry is not just about taste, but about emotion, memory, and connection.
Subtle textures, balanced flavors, and delicate presentations invited guests to slow down, to savor, and to rediscover the beauty of teatime, settled in the teatime room at The St. Regis Singapore which offered a serene and elegant backdrop — a space where time seemed to soften, allowing conversations to linger and experiences to deepen. At the heart of Mandy’s creations was chocolate from Weiss chosen not only for its quality, but for its character and history.
