古早味蛋糕 六寸烤模

材料:

低筋麵粉60g

沙拉油(因為忘了準備其他油品 只好用橄欖油 但沒有什麼怪味)30g

鮮奶40g

砂糖40g

蛋白3顆.蛋黃3顆



烤膜要是活動底的(烘培用具店或是各大購物中心都有賣.一個$100多)



A步驟

先把所有的低筋麵粉過篩

接著加入沙拉油及鮮奶攪拌均勻

然後蛋黃分幾次慢慢地加進麵糊攪拌均勻

B步驟

拿一個盆子把蛋白用打蛋器打發

記得裡面除了蛋白不可以有一點點”水/蛋黃”

不然到時候可能會打不發喔

打蛋白的同時糖分三次慢慢的加進去

打到最後蛋白會呈現非常綿密的蛋白霜狀 拉起來不會滴

把B步驟做出來的蛋白霜慢慢的加進A步驟的盆子裡面

一次1/3慢慢加

並且不可以拌太大

輕輕的拌到裡面沒有顆粒可以進烤鍋

倒進烤鍋之前要記得先抹油

烘烤之前可以先用鋁箔紙包住

烘烤時間設定10分鐘/溫度150度

跳起來之後拿掉鋁箔接著設定140度20分
