把經典法式甜點 Tarte Tatin 的做法，放進布丁裡。蘋果以奶油與糖慢慢煎煮，讓果肉吸收焦糖香氣，也帶出微微酸甜與熟成後的柔軟口感，再取代傳統布丁底部單純的焦糖層。挖下一匙時，滑嫩布丁、濃郁焦糖與燒蘋果一起入口，像是蘋果塔與布丁在盤子裡碰了面。甜度不搶戲，蘋果的果香反而讓整體更輕盈，層次豐富，卻依然保有布丁該有的滑順、也融合出目前為止沒有嚐過的新滋味。
