In Israel, plump, jam-filled or custard-filled sufganiyot, as donuts are called in Hebrew (singular, sufganiyah ), are used every year for the holiday of Hanukkah. One recent study found that 80% of Israelis eat at least one donut during the eight-day holiday.



Sufganiyot got its name from the spongy dough mentioned in the Talmud: sofgani . These Israeli confections are not doughnut-shaped at all: instead of having a hole in the middle (which helps create a more evenly cooked donut), the sufganiyot is first baked whole and then filled with filling. About 70% of sufganiyot are "stuffed" with jam, but Israeli bakers are also experimenting with other fillings, such as caramel, espresso cream, chocolate, halva - even savory fillings, like Bamba , a popular Israeli peanut snack .

Israelis consume about 24 million sufganiyot every year. The Israel Defense Forces alone buys about half a million donuts for the troops. In recent years, sufganiyot has become popular outside of Israel as a delicious addition to the Hanukkah feast.
