Marshmallow is a perennial plant with a branched rhizome and fleshy roots. The stems are numerous. The leaves are rounded or kidney-shaped, heavily pubescent on the underside. Marshmallow roots are the most common food. They contain 36% mucilage and starch, 11% pectin, 37% starch, 4% sugar, and 2% asparagine. Depending on growing conditions, they can contain up to 11% sucrose. Only annual rhizomes are harvested in late autumn and early spring before the start of the growing season. They are washed, peeled, cut, and dried. The sweet dried roots can be boiled and used to make porridge with milk or jelly. Raw roots are rolled in flour or breadcrumbs and baked in the oven. This is a perennial herbaceous plant. It has a wide vertical rhizome with simple, rarely branched yellow-brown roots, which reach 50 cm in length. Several erect grayish-green, short-branched stems about 1 m high with leaves and pale pink flowers, located in several pieces in the axils of the upper leaves, emerge from the rhizome. The leaves are petiolate. Grayish-green on both sides; the lower ones are ovate, five-lobed. The upper ones are three-lobed, with serrated-serrate edges. The flowers consist of a double, non-descending calyx, a five-petaled corolla and numerous stamens, and are fused almost to the very top into one common tube covering the pistil. The fruit is dry, in the form of a flattened circle, surrounded by a calyx that remains; The fruit splits into brown achenes.
