Four red and green chile condiments made for hot dogs, burgers, brats, and everything on the grill.

Whether it's a weeknight, low-effort dinner, or a weekend cookout with friends and family, don’t let summer grilling season pass without trying these four New Mexico chile favorites.

A delicious mustard that has a gentle heat from the chopped green chile and a subtle sweetness from the pickle relish. Perfect for a turkey sandwich, potato salad, or a burger. One of our favorites.

Red chile was made to pair with everything ketchup was made for, so why not put them together in one condiment? The earthy, sweet heat from red chile combined with tangy ketchup is perfect to elevate your fries, burgers, and dogs. (And why stop with the grill? For those who put ketchup on their eggs, try this and never go back to regular, boring ketchup.)

Everything you want from a dijon mustard - the whole mustard grains, the depth of flavor, the tang, but with chopped green chile. Amazing complement to a german pretzel, a reuben, or a bratwurst with all the fixings. This deserves a permanent place in your fridge.

The perfect BBQ sauce - sweet, spicy, tangy, and interesting because of the addition of Hatch NM Red Chile. Use as a marinade or a topping for your pulled pork, your BBQ burger with caramelized onions, or your ribs. Drooling yet? :)

Sticky, sweet, and garlicky: this glazed salmon recipe comes together in just 20 minutes

Ingredients

SALMON
4 salmon filets (about 6 oz each, ideally 1-1.5" thick)
1/2-3/4 tsp kosher salt
1/2 tsp black pepper
1/2 tsp smoked or regular paprika

SAUCE
3 Tbsp butter
2 tsp olive oil
6 cloves garlic minced
1/3 - 1/2 cup The Fresh Chile Co Hatch Hot Honey (https://www.salsasaint.com/product/the-fresh-chile-co-hatch-hot-honey/299?cp=true&sa=false&sbp=false&q=true)
3 Tbsp water
2 Tbsp lemon juice

Instructions
1. Adjust the oven rack to middle position, then preheat the broiler to low. (If your oven does not have a low setting, then make sure you monitor the salmon closely)
2. Pat salmon dry with paper towels, then season with salt, pepper, paprika, and set aside.
3. Add butter and oil to a large, oven-safe skillet over medium heat. Once butter is melted, add garlic, water, honey and lemon juice and cook for 30 seconds or so, until sauce is heated through. Do not let the garlic brown.
4. Add salmon, skin side down (if using salmon with skin), and cook for 3 minutes. While salmon cooks, baste frequently with sauce from the pan by spooning it over the top of the salmon. Reduce the heat if the sauce begins darkening too quickly.
5. Transfer pan to the oven. Broil salmon on low for 4-6 minutes, basting with sauce once during the broil, until the glaze is caramelized and salmon reaches desired doneness.

Garnish with minced parsley if desired. Pair with the side of your choice such as sauteed greens, steamed rice, a fresh salad, or roasted potatoes.

(note on salmon cooking temperatures: Take the temperature of the thickest part of the salmon. 125–130°F for a moist, medium salmon or 145°F for fully cooked salmon under USDA guidance. Remember that the temperature may rise several degrees while resting.)

Los Cuates is back, and we couldn't wait to put it on our shelves. This Albuquerque classic is sweet, very spicy, addictive, and not remotely interested in being “just another salsa.” It’s the one people remember, request, and get a little weirdly protective about. You'll just have to try it to understand how a salsa can earn a 46-year Burqueño cult following.

A good steak salad should still feel like dinner. This one does. Grilled sirloin, charred corn, sharp Gorgonzola, crisp greens, and a bright balsamic dressing make it hearty without being heavy. Add a little Apicklelypse Shrunken Head on top, with tomatillo, lime, avocado, jalapeño, and New Mexico green chile, and it brings the whole thing into sharper focus.

Ingredients
For the Steak Marinade
1 lb sirloin steak
2 tablespoons balsamic vinegar
1 tablespoon Worcestershire sauce
¼ cup extra virgin olive oil
½ teaspoon Dijon mustard
¼ teaspoon garlic powder
½ teaspoon coarse salt
¼ teaspoon ground black pepper

For the Salad
1 cup cherry tomatoes, halved
½ red onion, thinly sliced
4 oz Gorgonzola cheese, crumbled
2 heads endive lettuce, outer leaves removed, halved and chopped into 2-inch pieces
6 cups mixed spring greens
1 ear corn, husk removed
or 1 14 oz can corn, drained and patted dry
1 tablespoon extra virgin olive oil, for the corn
Salt and pepper, to taste

For the Gremolata
2 tablespoons fresh basil, minced
2 tablespoons fresh parsley, minced
1 clove garlic, minced
1 tablespoon lemon zest

For the Vinaigrette
3 tablespoons balsamic vinegar
½ cup extra virgin olive oil
½ teaspoon Dijon mustard
Dash of salt
Fresh ground black pepper, to taste

Instructions
1. Marinate the Steak
In a medium bowl, whisk together the balsamic vinegar, Worcestershire sauce, olive oil, Dijon mustard, garlic powder, salt, and pepper.

Place the steak in a large zip-top bag or shallow dish. Pour the marinade over the steak, making sure it is fully coated. Seal or cover, then refrigerate for 30 minutes.

2. Make the Gremolata
In a small bowl, combine the basil, parsley, lemon zest, and minced garlic. Set aside.

3. Grill the Corn
Preheat a cast iron grill pan or outdoor grill to medium-high heat.

Drizzle the corn with olive oil and season generously with salt and pepper. Grill, turning occasionally, until lightly charred and tender, about 10 minutes total.

Remove from heat and let cool slightly. Slice the kernels off the cob and set aside.

If using canned corn: Drain well, pat dry, and sauté in a hot skillet with a little olive oil until lightly browned.

4. Cook the Steak
Remove the steak from the refrigerator.

Place the steak on the hot grill or grill pan. Cook for 4 to 5 minutes per side for rare to medium rare, depending on thickness.

For best results, cook to:

125°F for rare
130–135°F for medium rare

Transfer the steak to a plate and let it rest for 5 to 10 minutes. Slice thinly against the grain.

5. Make the Vinaigrette
In a small bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, salt, and pepper until combined.

6. Assemble the Salad
In a large bowl, combine the mixed greens, endive, cherry tomatoes, red onion, grilled corn, half of the Gorgonzola, half of the gremolata, and half of the vinaigrette.

Toss gently to coat.

Transfer the salad to a serving platter or individual plates. Top with sliced steak, the remaining Gorgonzola, and the remaining gremolata. Drizzle with additional vinaigrette as desired.

Serve immediately. Try with the different pairings listed below to shake it up!

Pair it with Apicklelypse Shrunken Head, a tomatillo, lime, avocado, jalapeño, and New Mexico green chile hot sauce that turns the sirloin into something halfway between steak salad and carne asada night. Just drizzle over the steak or serve it on the side as a dipping sauce.

Drizzle a few drops over the sliced steak as it rests or whisk 1/2 a teaspoon into the vinaigrette - the cranberry, mustard, red chile, and pickled green bean bite make it weirdly perfect for a balsamic steak salad with Gorgonzola and grilled corn.

A sprinkle of the tart green apple hot sauce will cut through the richness of the steak and Gorgonzola.

Try a few dashes over the steak or mixed into a little sour cream/Greek yogurt as a creamy drizzle.

Major Acre Lousianna Style Hot Sauce

Here's a love story for you. A small organic farm in New Orleans grows way too many peppers. Instead of crying about it (they saved that for the onions), they made a Louisiana-style hot sauce so good that friends started placing bulk orders. Then in 2021, they did what any pepper-obsessed person would do; they moved to New Mexico. Their sauce is ridiculously simple. Just three ingredients: chile peppers, salt, and vinegar. That's it.
