Sometimes we are asked "is the honey fresh?"
In Minnesota, there is only one season when honey is collected/extracted from the hives - the fall time.

Bees collect the honey all summer long, and then get ready for winter. They use the honey all winter long to survive, so not all honey is collected from the hive.

The enzymes that are in honey from the bees preserve it and keep it from spoiling or molding. The honey will last virtually forever.
Matter of fact - archaeologists have found honey in the pyramids and it was still edible!

So, each fall time, our honey is collected, ready to be enjoyed.
