New York State Department of Environmental Conservation (DEC) Commissioner Amanda Lefton announced several changes to deer hunting regulations to increase harvest of antlerless (primarily female) deer and improve DEC’s ability to manage abundant deer populations.

Most people think they do not like pork chops. They have just always been overcooked. 🐷

The USDA lowered the safe minimum for pork from 160°F to 145°F in 2011.

Most home cooks still cook to 165°F. That is 20 degrees past maximum moisture.

At 145°F pork chops have a pale pink blush in the centre. Completely safe, fully pasteurised and at its most moist.

The rendered fat cap method changes the game. Stand the chop fat side down in a cold pan and let the fat render as the pan heats up. That liquid fat then self-bastes the entire chop during the sear.

Wet brining for 4 hours forces salt water into the muscle fibres. The chop retains significantly more moisture during cooking.

Save this and cook your pork chop correctly.
