Fall menus ask more of a combi oven. Braising, roasting, and batch cooking lean on steam, and steam performance depends on two things operators rarely check until output goes inconsistent: water quality and probe calibration.
Scale can build in the generator, changing how quickly the cavity reaches setpoint. A probe drifting a few degrees produces food that looks right and holds wrong. Neither of these show up as equipment failure but will look like a dish coming out differently this week than last.
If your combi oven's consistency is starting to drift, now is the time to get it checked.
