If your herb garden is producing faster than you can use it, donโt let those extra herbs go to waste! ๐ฟ๐ง
Turn a handful into homemade herb salt.
This is especially useful when you already have plenty of herbs drying or tucked into the freezer and want another simple way to preserve that garden flavor.
Start with 1 cup of coarse salt and about ยผ cup of finely chopped fresh culinary herbs.
Rosemary makes a wonderful salt for potatoes and roasted vegetables. Basil is delicious with tomatoes. Thyme works beautifully with chicken and vegetables, while oregano is perfect for Italian dishes. You can also combine several herbs and make your own garden herb blend.
Mix the chopped herbs thoroughly with the salt. Spread the mixture in a thin layer and dry it completely before putting it into a jar. Because fresh herbs contain moisture, you donโt want to seal the mixture up while itโs still damp.
Once completely dry, crumble apart any clumps and transfer your herb salt to a clean, dry airtight container.
Then keep it near the stove!
Sprinkle it over roasted garden vegetables, potatoes, eggs, tomatoes, salads, chicken or fish. You can even experiment with additions such as dried lemon zest, garlic or chili flakes.
One garden could give you several different jars: rosemary salt, basil salt, thyme salt and a mixed garden herb salt.
They would also make pretty little homemade gifts.
This is one of my favorite kinds of preservation because you arenโt just saving the herbs. Youโre making something you'll actually reach for while cooking.
