If you have ever known a greek grandmother, you know they don’t waste anything. I’m guessing that is how greek orange cake (Portokalopita) came about. Ironically, now we have to dry the phyllo for the recipe. While making it, I imagined a determined yia-yia making use of leftover dried out phyllo, yogurt and oranges. I tweaked this recipe to make it more convenient (dried orange zest and orange juice). Whether or not it stands up to Peach Bottom Inn’s fabulous dessert is TBD.
