🍁 Maple Dijon Harvest Chicken & Vegetables
There’s something about a pan full of roasted chicken, apples, root vegetables and herbs that just feels like fall has officially arrived.
This one is sweet, savory, herby and cozy without being complicated — exactly the kind of dinner that makes the whole house smell amazing while it cooks.
And because a little intention belongs in the everyday things too, we’re tucking just a touch of that into the recipe. 💫

🍎 You’ll Need
For the chicken & vegetables:
* 6 bone-in, skin-on chicken thighs
* 1 lb baby potatoes, halved
* 3–4 carrots, cut into chunks
* 1 large yellow or sweet onion, cut into wedges
* 1–2 firm apples, cut into thick wedges
* 4 cloves garlic, minced
* 2 tablespoons olive oil
* Salt & freshly cracked black pepper
* 2–3 sprigs fresh rosemary
For the Maple Dijon Glaze:
* ¼ cup pure maple syrup
* 3 tablespoons Dijon mustard
* 1 tablespoon apple c***r vinegar
* 1 tablespoon olive oil
* 2 cloves garlic, finely minced
* 1 teaspoon chopped fresh rosemary
* ½ teaspoon smoked paprika
* Pinch of salt
* Freshly cracked pepper
🍁 Let’s Make It
1. Heat the oven to 425°F.
Lightly oil a large sheet pan or roasting dish.
2. Start the vegetables.
Add the potatoes, carrots and onion to the pan. Drizzle with olive oil and season generously with salt and pepper. Toss everything together and spread it into an even layer.
3. Make the maple-Dijon glaze.
Whisk together the maple syrup, Dijon, apple c***r vinegar, olive oil, garlic, rosemary, smoked paprika, salt and pepper.

Stir clockwise for a few turns and think about something you’d like to welcome into your home this season — warmth, abundance, peace, laughter, connection… whatever feels right. 💫
No elaborate ritual required. You’re already standing there stirring. Might as well put something good into it.
4. Add the chicken.
Pat the chicken thighs dry and season them with salt and pepper.
Nestle them skin-side-up among the vegetables, then brush them generously with the maple-Dijon glaze. Reserve a little glaze for later.
Tuck a few sprigs of rosemary around the pan.
🌿 Rosemary has long been associated in folklore with remembrance, protection and the home. As you tuck it into the pan, you can quietly give it a job: Let this home be warm. Let the people in it be well loved.
5. Roast.
Place the pan in the oven and roast for about 25 minutes.
Remove it, add the apple wedges around the chicken and vegetables, and brush the chicken with the remaining glaze.
Return to the oven for another 15–20 minutes, or until the chicken reaches a safe internal temperature of 165°F and the vegetables are tender.
If you’d like the chicken skin extra golden and caramelized, give it a couple of minutes under the broiler at the end. Keep an eye on it — maple can go from beautifully caramelized to well, that escalated quickly 😂.
6. Finish & serve.
Let everything rest for about 5 minutes.
Spoon some of those maple-Dijon pan juices over the chicken and vegetables, scatter a little fresh rosemary over the top if you have it, and bring the whole pan to the table.
