Our Vanilla Orchid, Lavender Citrus, and Cloud Forest bars are all sweetened with coconut sugar, one of the lowest glycemic sweeteners available.

These bars have a GI of 55 or under. Unlike refined sugar, coconut sap is absorbed slowly, causing a gradual rise in blood sugar rather than a sharp spike. You can enjoy these without a sharp blood sugar spike and crash.

Cacao is not considered a fermented food or a probiotic, however, fermentation is a big part of the process and contributes to determining flavor.

It’s the pulp surrounding the bean that ferments causing a breakdown of proteins and carbohydrates inside the bean. The result of the pulp fermenting is the curing of the bean into viable cacao seeds and it’s how the flavor precursors are made.
