Is it really a trip to LBI without an overflowing bread bowl of New England Clam Chowda? And don't forget the oyster crackers!

Throw it back to 1999 when we first opened our little hole in the wall chowda shop! Our New England recipe goes back to 1966 when it was a popular menu item at our old restaurant The Mooring. We had been competing in (and winning) Chowderfest years before we ever had a storefront. Check out Our Story on our website for anyone who wants to learn a little more history on the place! Country Kettle Fudge was one of our founding shops back in 1966. I don't think the recipe or technique has changed much in 60 years!

Did you know that chemistry is key to making creamy and delicious fudge? 🥼⚗️📉

In order for the fudge to come out perfect, it must be cooked to the exact temperature and then cooled slowly and evenly until it becomes a super-saturated solution. The smallest disturbance during cooling will induce crystallization so the copper kettles are key to cooling the fudge mixture steadily.

Then, at a precise temperature, the next phase of the process is to whip the mixture with a large wooden paddle. This step requires skill, timing, and technique. It is the slow cooling and rapid beating in the copper kettle that causes the mixture to change very quickly from a super-saturated mixture into the smooth, creamy fudge Country Kettle is famous for.
