The story behind Big Red's Original Boudain:
James "Big Red" Pomier was born in Kaplan, Louisiana and lived in Port Arthur, Texas for 52 years. He was a meat cutter for all of his adult life as he served his loyal customers and friends at various local grocery markets in the Port Arthur-Groves area such as The Atlantic Food Store in Groves and Nick's Grocery in Port Arthur. He was very proud of h
is Cajun heritage and loved to listen to Cajun music while he worked. Big Red developed several personal Cajun recipes which included stuffed pork chops, Italian sausage and fresh pork Cajun sausage. His most famous recipe, however, is his Cajun Boudain which he cooked daily, averaging over 2000 lbs per week. This quickly won him the local title of "Boudain King" from his many friends and customers. His reputation and his tasty boudain have traveled from coast to coast and as far as Hawaii. As stated in an article published in the Port Arthur News by his former employer, "Big Red's recipe has not been revealed and is being used only by him." At his personal request, his recipe has been kept and is only known by his immediate family. Big Red became a legend of the Golden Triangle area and will forever be lovingly remembered as the original "Boudain King" of Texas. Due to respect for the working relationship that Red had with Nick & Joe Nicotre for 20+ years, we as his family decided not to compete with their efforts regarding the boudain Red introduced to their store. Since the Nicotre's decided to close their store and are no longer making their boudain, we felt it's time to allow the Golden Triangle (and beyond) to experience what's been missing since Red's passing in 1990 – HIS ORIGINAL RECIPE!
