Brown Butter Blueberry Basil Black Cod Recipe
Ingredients
• 4 Wild For Salmon black cod portions
• White cooking wine (as needed)
• Salt & black pepper (to taste)
• 1 lb salted butter
• 1 pint fresh blueberries
• ¼ cup honey
• 1 tsp ground cinnamon
• ⅛ cup fresh basil, finely sliced
Directions
1 Preheat oven to 375°F. Place the black cod on a parchment-lined baking sheet, brush lightly with white cooking wine, and season with salt and pepper.
2 Bake for about 15 minutes, or until the fish reaches an internal temperature of 145°F.
3 While the fish bakes, melt the butter over medium-high heat, stirring occasionally until it turns light golden brown and develops a rich, nutty aroma. Do not let it burn.
4 Reduce heat to low-medium and stir in the blueberries. Cook until they soften and burst, releasing their juices.
5 Remove from heat and stir in the honey and cinnamon until fully combined.
6 Blend the sauce with an immersion blender until smooth.
7 Fold in the fresh basil.
8 Spoon the warm sauce over the baked black cod and garnish with additional fresh basil.
