Easy Mediterranean Chickpea Salad
• 6 cans low-sodium chickpeas (rinsed & drained)
• 2 cups diced cucumber
• 2 cups diced cherry tomatoes
• 1 cup finely minced red onion
• ½ cup olive oil
• ⅓ cup red wine vinegar
• 2 tbsp dried oregano
• Black pepper to taste
• Optional: 1 cup crumbled feta
Then just hook it up to your preference add peppers, olives, crushed red peppers. Do you!!
