One of the things we evaluate during our quality-control process is odor—and tallow doesn't always smell the same.
Depending on the batch, you might pick up notes that remind you of:
- Pie crust
- Peanuts
- Play-Doh
- Grass - “from the kerotin”
- A light, savory “beefy” aroma
…or sometimes almost nothing at all.
Here's something you might not expect: smell is actually part of our quality-control process.
But we don't just open a container, take a sniff, and call it good.
At VBar, every production batch goes through a quality-control process that looks at multiple characteristics of the finished tallow.
ODOR
We evaluate the aroma against standardized sensory descriptors. Clean and neutral? Great. Lightly beefy? Acceptable. Sharp, burnt, sour, or paint-like? That's a very different story.
COLOR
We compare the finished tallow against our established color standard to make sure it meets our specifications.
TEXTURE
We evaluate how the tallow cuts and feels, looking for the smooth, consistent texture we're after.
WATER ACTIVITY
We measure available water in the product as part of our microbial-control program.
CHEMICAL TESTING
We monitor markers such as free fatty acids and oxidation to help evaluate stability and detect potential degradation.
MICROBIAL TESTING
Bacterial testing is another part of our safety verification process.
And that's just the in-house batch analysis.
Our program also includes third-party laboratory testing as an external validation, along with random blind correlation testing to help make sure our equipment and operators are staying calibrated.
Because quality isn't just about whether something smells good.
It's about testing, measuring, evaluating, and making sure every batch meets our standards.
