MATCHA MONDAYS! Pouring our Dipped Matcha Waffle Cone today. What a sight. Neon electric green. Verdant. Creamy, crispy, sweet and grassy. Our own gluten-free waffle cone cookies set in our signature vegan white chocolate. Peruvian cacao butter! God we love it. The only white chocolate we keep around in the summer.

NOW BOOKING SUMMER CLASSES! Come make truffles, ice cream, and bean-to-bar chocolate with us at the factory. Take a break from the heat and get your hands dirty inside, with all you can eat bean-to-bar samples and your own creations! We’re now booking the following:

Father’s Day Truffle Making & Coffee Pairing Class: a Hand-Rolled Truffle Making class to bring the paternal figure in your life to. We’re offering uniquely flavored ganaches and coatings reminiscent of fun and classic desserts: Tiramisu, Banana Cream Pie, Carrot Cake, and Mud Pie – condensed into the perfect bite-size truffle made using our single-origin, unroasted chocolate. In this class, you will learn about chocolate and ganache, how to hand-shape ganache, temper chocolate, and enrobe and coat truffles. To round out class, we’ll lead you through a coffee tasting, pairing a coffee from a local roaster with your truffles.

Ice Cream Making Classes: Join us for a hands-on experience of making ice cream in an old-fashioned way – using our in-house vegan ice cream base and a traditional ice cream maker, you’ll churn out two pints of unroasted, double dark chocolate ice cream! During class, you’ll learn about the science and technique behind making ice cream from scratch. We’ll have a rotating selection of toppings (all gluten-free, nut-free, and vegan!), for you to get creative and customize your pints. You’ll also make your own waffle cones or bowls during class to pair with the ice cream. When you’re all done, we will provide ice packs and insulators, but we recommend heading home soon after to keep your ice cream at its best.

Due to the nature of this class, students work in pairs. If you’re flying solo, be prepared to make a friend :)

June First Nibs is BERRY-FULL and beautiful! Berries and chocolate are timeless combination, but berries and *our *chocolate is an especially perfect duo. Fruit-forward, unroasted dark chocolate 🤝 bright, juicy berries. This month we put together three bars infused with four berries and a Raaka twist:
🫐 Blueberry Crumble: Crushed blueberries, folded in dark chocolate and garnished with a homemade crispy oat crumble.

🍒Cherry Lime: Big and zesty. Juicy cherries crushed and folded in our dark chocolate, limes for zest.

🐦 Wild Berries: our goji and lingonberry-infused Smithsonian Bird-Friendly Cocoa certified bar.

🌱 As always, vegan and 100% gluten-free.

We are having a blast at the show, sampling our Bird-Friendly Cocoa bars, Amaranth Vanilla and Wild Berries! Both are made with single origin Dominican cacao from , a bird sanctuary and cacao farm. Uncommonly delicious beans, sustainably grown through agroforestry, make for uncommonly delicious chocolate with a mission. Cacao meets conservation.

WE’RE COMMITTING TO DATES! Introducing our new Pure Cacao & Dates & Vanilla, our very first classic line bar that is 100% date-sweetened. Just cacao beans from in the D.R., ground dates, and a dash of vanilla bean. The perfect throuple.

We’ve made many limited batch date-sweetened bars over the years: Date Horchata, Dates & Sea Salt, Date Za’atar, Date Shake, Date & Nibs, Date Peppercorn, date truffles… to name just a few. As you know, dates are STICKY (more on that), which makes them tough on our grinders. As a small chocolate maker - doing everything from scratch - we have to be careful! But every time we make a date bar, you love it and so do we. So, we’re committing to dates.

This bar has a fantastic thick melt that sticks to the top of your mouth and lingers much longer than usual. And who would have a problem with that? That’s all thanks to the sticky quality of dates. We taste notes of caramelized apples and rich, super dark chocolate mousse. At 80% cacao, this bar is less sweet than other date bars on the market. More cacao, less sugar and 0g of added sugar. Since we make everything from bean-to-bar, we can go a little darker than most.

CARAMEL CORN CRUNCH BTS! We’re taking you through the recipe: single origin Tanzanian cacao from blended with roasted sunflower seed butter and roasted cane sugar. Let that grind until silky smooth. Then after milling and remixing, we fold in crushed salted popcorn. We get that corn all incorporated and then we pour! We think this bar tastes like a “Nutter Butter”, but better than we ever remember tone being. It’s nutty, buttery, crispy, salty, creamy, milky… We could go on.

Emptying out the CocoaTown grinders. It’s a messy job, but somebody’s got to do it 😉. Each grinder makes about 400-500 bars of chocolate. We filter the chocolate through sieve to make sure the texture is silky smooth (we also use a roll mill to refine the particle size for the silkiest melt!).

BUBBLE GUM SWIRL! Tutti-frutti white (Strawberry, banana, pineapple, and vanilla white chocolate) swirled in a vanilla dark chocolate base. The OG-recipe for bubble gum - no esters and fake flavors. We don’t miss them, and we hope neither will you. You know how we do things: no artificial flavors, only whole food ingredients. So, this is our take on that “tutti fruitti” idea: we blended dried and ground strawberries, bananas and pineapple with a dash of vanilla into our vegan white chocolate, then swirled that into Kokoa Kamili’s bright and fruity cacao. Shipping now with this month’s First Nibs batch. Come sample at the factory store.
