Seasoning my black UDS and prepping my silver UDS for my 1st actual Catering gig. My drum guy wants me to smoke Butt and Brisket for his Mom's Birthday. Practicing with a 16lb Brisket .

1st smoke in our new home. I must say, the Lava Lock temp controller is a game changer. This is my 2nd time using it and I wonder why it took me so long to get one. It makes my UDS as reliable as my oven. True story!!!
I set up my basket and fired up around 8:45. Thru my 10lb butt on at 9:12pm. Temp stayed at 226. Midnight I checked and still at 226. Went to bed and woke up at 5am. Guess what??? Still at 226, internal temp at 163. Preped for wrap and at 165 wrapped, put back on UDS and went back to sleep.
Woke up at 8:20 and temp was 189. Got my morning coffee and sat on the deck til it hit 205. Put it in a cooler wrapped in a towel at 10:30am and removed at 2:30pm
I guy I get my smooth side drums from delivered me 6. Made him a sammich and he said it was probably the best pulled pork he has had. Did I say that I LOVE my temp controller???😎👍🍖

Smoking 2 butts on the UDS using a lava lock temp controller for the 1st time. Of course my new smoking buddy is helping me.
