Today I had the pleasure of attending an incredible chocolate session with the talented teams from Felchlin Switzerland and AUI Fine Foods.

A heartfelt thank you to everyone who shared their knowledge, techniques, and passion for truly exceptional chocolate. It’s inspiring to spend time with people who are dedicated to excellence and who remind us that there’s always something new to discover.

One of the things I love most about chocolate is that it’s the perfect blend of science, artistry, craftsmanship, and tradition. No matter how many years you’ve spent working with it, there’s always another technique to master, another flavor to explore, and another story to tell.

As someone who has spent decades in the specialty food industry, days like today reaffirm something I believe wholeheartedly:

Never stop learning. Never stop tasting. Never stop creating.

Thank you again to the Felchlin and AUI for an unforgettable experience. I can’t wait to put some of today’s inspiration into practice.
