🐖 Pork Secreto: $12 a pkg. Every butcher's got a secret, and this one's ours!

Spanish butchers called it "secreto" because they kept it for themselves 🧑‍🍳. It hides on the outside of the shoulder behind a layer of fat, there are only two per hog, and most American shops never separate it out at all.

It's some of the most marbled meat on the animal, which is why the cut often gets called the wagyu of pork 🐖➡️🐄.
