“I think I’m done here.”

Tail end of the pandemic, pinching the bridge of my nose. 15 years in restaurants and hotels, and I’d hit my limit.

The answer arrived after a night of “herbal supplements” — the name, the concept, the whole shape of Rocks + Acid, all in one night. A workable plan finished within 24 hours.

Along the way: CAV Wine Bar in Manila, The Corner Kitchen in Asheville, Eleven Madison Park in NYC, Beverage Director + Assistant GM at The Fearrington House. Somewhere in there I also became an Advanced Sommelier through the Court of Master Sommeliers, and picked up a few write-ups — local to international.

It’s a long way from a strict, alcohol-free Catholic upbringing. Longer still from 12-year-old Paula, who dreamed of being a neonatal surgeon. Delulu much?

But I love where I landed. The shop carry the wines that excited me during my career as a somm — now available in my own neighborhood. Yep, we’re small but mighty! 💪🏽
Favorite🍷?
For the record, this question stresses me out.
Am I drinking this myself or with others? If with others, will they appreciate it if I open x wine? On its own or with food? Is it hot out? Where am I drinking this - fancy pants restaurant/beach/or at home, folding clothes? Yes, I have favorite wines for every possible scenario.

TL;DR: Grower Champagne

Yes, it took us a week to recover. 😵‍💫

Tour de France, our Fall Walkaround Wine Tasting last Sunday was a whole thing: seven French regions + six cheeses for $55. (Girl math: that’s basically two martinis w/ tax and grat!)
