Crispy Roasted Chicken, Golden Potatoes & Egg Veggie Power Plate π₯π₯
This hearty plate brings together crispy roasted chicken, golden potato wedges, hard-boiled eggs, broccoli, and a mountain of fresh shredded carrots. Protein-packed, colorful, and filling as heck.

For the roasted chicken
1Β½ lb bone-in chicken pieces
1Β½ tbsp olive oil
3 garlic cloves, minced
1 tsp smoked paprika
1 tsp garlic powder
Β½ tsp onion powder
Β½ tsp dried thyme
Β½ tsp black pepper
1 tsp salt
1 tbsp lemon juice
For the potatoes
1 lb potatoes, cut into thick wedges
1Β½ tbsp olive oil
Β½ tsp paprika
Β½ tsp garlic powder
Β½ tsp black pepper
Β½ tsp salt
For the vegetables & eggs
3 large carrots, coarsely grated
3 cups broccoli florets
3 large eggs
Β½ cup sweet corn kernels, optional
1 tbsp lemon juice
1 tbsp olive oil
Salt and black pepper to taste

Season that chicken: Combine olive oil, garlic, smoked paprika, garlic powder, onion powder, thyme, pepper, salt, and lemon juice. Rub all over the chicken and marinate for at least 30 minutes.
Get roasting: Preheat the oven to 425Β°F (220Β°C). Arrange the chicken on a baking sheet and roast for about 35β45 minutes, depending on the size of the pieces, until deeply browned and cooked through to at least 165Β°F (74Β°C).
Make those golden potatoes: Toss the wedges with olive oil, paprika, garlic powder, salt, and pepper. Roast alongside the chicken for 30β40 minutes, turning halfway, until golden, caramelized, and tender inside.
Cook the eggs: Place the eggs in simmering water for about 10β11 minutes. Transfer to cold water, peel, and cut into halves.
Steam the broccoli: Steam for 5β6 minutes until tender but still bright green. Don't overcook itβwe want those florets looking fresh.
Prep the carrots: Coarsely grate the carrots and toss with lemon juice, olive oil, salt, and pepper. Mix in a little sweet corn if you want to match the plate's texture.
Build the plate: Arrange the crispy chicken across the bottom, golden potato wedges in the center, grated carrots on the right, broccoli around the upper-right, and halved boiled eggs along the upper-left. Now that's a loaded plate.
