Best Chicken Salad

Ingredients
4 cups diced poached chicken, recipe follows
1 stalk celery, cut into 1/4-inch dice
4 scallions, trimmed and thinly sliced or 1/4 cup sweet onion cut into 1/4-inch dice
1 1/2 teaspoons finely chopped fresh tarragon or fresh dill
2 tablespoons finely chopped parsley
1 cup prepared or homemade mayonnaise
2 teaspoons strained freshly squeezed lemon juice
1 teaspoon Dijon mustard
2 teaspoons kosher salt
Freshly ground black pepper
Directions
In a mixing bowl, toss together the chicken, celery, scallions and herbs. Set aside.

In a small bowl, whisk together the mayonnaise, lemon juice, mustard, salt and pepper to taste. Add to the chicken and mix gently until combined. Refrigerate until ready to serve.

Cook's Note: Serve on a bed of lettuce with sliced tomatoes, in half an avocado or in a chicken club sandwich made with artisanal bread, crispy smoked bacon, vine-ripened tomatoes and lettuce.

POACHED CHICKEN FOR SALADS
10 sprigs parsley
2 sprigs fresh thyme
1 small onion, halved
1 small carrot, halved
1 stalk celery, halved
3 pounds chicken breasts halves, on the bone and fat trimmed
5 to 6 cups chicken broth, homemade or low-sodium canned
Put the parsley, thyme, onion, carrot, celery, and chicken breasts in a medium saucepan. Cover with the broth, and bring just to a boil. Lower the heat to very low and cover. Poach the chicken for 20 minutes or until firm to the touch. Remove the pan from the heat, uncover, cool the chicken in the liquid for 30 minutes.

Transfer the chicken to a cutting board and reserve the liquid. Bone and skin the chicken and cut the meat into 1 inch cubes. Discard the bones and skin.

Strain the broth and store, covered, in the refrigerator for 3 days or freeze for later use. Remove any fat from the surface of the broth before using. Yield: 4 cups cubed chicken or 4 to 6 servings

Chocolate Berry Mouse Cake

Ingredients
1 roll (16.5 oz) Pillsbury® refrigerated chocolate chip cookies
1/4 cup cocoa
1 1/2 cups fresh raspberries
4 containers (4 oz each) Yoplait® Whips!® raspberry mist yogurt
1cup whipping cream, whipped
2 tablespoons hot fudge topping
1 cup fresh blueberries

Heat oven to 350°F. In large bowl, stir or knead cookie dough and cocoa until well blended.
On greased cookie sheet, drop dough by tablespoonfuls to make 6 cookies. Bake 8 to 12 minutes or until set. Cool 2 minutes; remove from cookie sheet to cooling rack.
Meanwhile, press remaining dough in bottom of 9-inch springform pan. Bake 12 to 15 minutes or until set. Cool completely, about 30 minutes.
In medium bowl, fold 1/2 cup of the raspberries into yogurt; spread evenly over crust. Crumble cookies; sprinkle over yogurt mixture. Carefully spread whipped cream over cookie crumbs. Freeze 4 to 5 hours or until firm. Remove sides of pan.
Drizzle 1 tablespoon fudge topping over dessert. Top with blueberries and remaining raspberries. Drizzle with remaining 1 tablespoon fudge topping. Store in freezer.

FUN ICE CUBES

I saw this and thought what a fun idea for a party or the large pitchers of tea or lemon aid we make in summer. Add mixed fresh fruit to the ice cube trays, add water and freeze. Some people are just genius when it comes to this. Would be great in a glass of Sprite too.

Summer Chicken Salad
Mix chicken, apples, grapes, walnuts and a bit of sour cream with salt and pepper. Wrap in a lettuce leaf for a delicious fresh idea!

Hi Everyone! I am posting the following for the South Lake Animal League in Clermont. If you can help them please do. Thanks! :)

We are very low on extra space these days at the Adoption Center and although we could reorganize the Big Shed to make more room, it is much too hot to go about doing that anytime soon. If anybody has an extra storage shed they could Donate, the Adoption Center staff would greatly appreciate it. Any size will do. If it is waterproof that is great, if not, that is great too, we have plenty of items that can get wet.
