I'm a chef, 24 years, and I roast every batch here in Clovis myself, weekly.

We put out a coffee called Surj. It's pulverized extra fine, finer than espresso, the grind you use in the jazzve. Almost all of the coffee sold in this country for that pot was roasted overseas months ago. I roast it here and ship it out fresh.

THIS JUST IN — Daily Coffee News ran a story on the roastery today.

They came for the room behind the warehouse. Chesterfield sofas, brass lamps, the burlap sacks from Brazil, Guatemala, Peru and Indonesia on the wall, the coffee cherry tree painted by hand. "Dolce far niente" written into the mural.

They wrote up Cup Rings too — the coasters we put in front of you at a cupping so you can say what you taste without needing coffee snob vocabulary.

The cuppings are still free, and still eight seats. Wednesday and Thursday, 11 AM and 1 PM. About 45 minutes.

☕ How to Store Your Coffee (So It Actually Tastes Fresh) — You bought good coffee. Don't let your pantry undo it. Coffee has four enemies: air, light, heat, and moisture. Keep beans away from all four and they taste the way we roasted them.

A few simple rules: Keep beans in an airtight container, somewhere dark and cool. A cabinet away from the stove is perfect. Skip the fridge. It's humid in there, and coffee soaks up every smell around it. Don't grind until you're ready to brew. Whole bean holds its flavor way longer than pre-ground — that's exactly why we only ship whole bean. Buy what you'll actually drink in a couple weeks. Fresh is the whole point.

My grandmother never used a timer.

She stood over the stove with the jazzve in her hand and watched the foam rise. That was the whole method. Armenian coffee — soorj — passed down like that. No measuring cups. No gadgets.

People think coffee culture started with espresso machines and pour-overs. It didn't. This has been around for centuries.

That bag on the grocery shelf? Roasted months ago. Sometimes a year ago. And there's no roast date on it — because they don't want you doing the math.

☕ HOW TO MAKE GREAT DRIP COFFEE AT HOME

Good coffee at home isn't luck — it's a few things you can control. Here's exactly how we'd brew a clean, balanced cup in your kitchen. 👇

☕ Get the ratio right
1 gram of coffee for every 16 grams of water. Easiest with a small kitchen scale:
• One mug (~12 oz water): ~22g coffee
• Full pot (~40 oz water): ~75g coffee
No scale? About 2 level tablespoons per 6 oz of water. Weak or sour? Add a little more coffee. Bitter? Use a little less.

💧 Water is most of your cup
Coffee is ~98% water, so it matters more than you'd think.
• Filtered is best — carbon filters remove the chlorine taste.
• Skip distilled/softened water — coffee needs a little mineral content.
• Brew just off the boil (195–205°F).

⚙️ Grind fresh, grind medium
Grind right before brewing, to the texture of coarse sand. Too fine = bitter, too coarse = thin.

Then: rinse your paper filter, level the grounds, brew, and drink it soon — coffee left on a hot plate turns bitter fast.

✨ Got an espresso machine? Same beans, finer grind — aim for 18g in, 36g out, in about 25–30 seconds.
