Sunday april 24th is almost here. We'll be at Tioga in downtown from 12pm to 5pm or sell out.

Still have a few Dirty Shoyu ramen kits left. Come grab yours today! These are going to be the last ramen kits for the month. We are going to take a short break next week and then we move into our ramen pop up on the 24th at Tioga Brewery.

Come join us and grab yourself some ramen, some beers and maybe a smoked salmon onigiri for a snacking.

Its going down on April 24th over in the brewery district. We're doing a pop up (probably the only one for the year). Heres what to expect on the menu:

- Garlic Miso Ramen
-Mazesoba Ramen (Dry ramen)
- Smoked Salmon Onigiri (rice balls)

The "Dirty Shoyu" tare. Its the similar to my regular shoyu tare but instead of straining out all the flavors, it gets blended up. This packs a much stronger, lasting punch of flavor and hopefully I can do Keizo proud.

I will be putting kits up for grabs on Doordash and UberEats this weekend finally. There are still 10 ramen kits left for this week. Message me or my other account, , to reserve yours today.

This weeks ramen kits were suppose to be Tori Paitan (similar to tonkotsu but 100% chicken) but I couldnt get product in on time. So Im going to pivot to doing a "Dirty Shoyu." This is an homage to the famous Ramen Shack in New York. Doubt Ill be able to come close to how good his bowl is.

The bowl is similar to how I do the Tokyo Shoyu. Itll come with chashu, ajitama, spinach, green onions, and it should be bamboo but I dont have time to get it and ferment properly, im gonna add extra chashu.

Black garlic oil. This thing packs some garlic flavor. Garlic is cooked to 3 or 4 different stages ranging from light brown to almost burnt then it gets blended up.

I still 4 kits left for anyone who are looking to try authentic tonkotsu ramen with black garlic. These kits will be ready by this evening for anyone looking to get theirs early.

Tonkotsu broth check in: the color looks greast, thick but not too thicc, and it smells amazing. Kits will be ready Friday as usual
