We have broken ground and started laying block on our new Sugar Shaq (yes, Sugar Shaq. Maple producers call their production facilities a sugar shack but we are different and love Shaq).
We applied for and received a RFSI (Resilient Food Systems Infrastructure) grant from the USDA to make this construction possible. Our original Sugar Shaq was 340 feet and we quickly outgrew it. Our new Sugar Shaq will be 2,200 sq feet and will be a game changer for us from a production standpoint. All of our equipment will be in one place and will allow for uniform-efficient workflows with floor drains for easy cleanup with sticky situations. Special thanks to my Dad, Mike Milligan, for designing and lining up all of the contractors for this project and overseeing the project. We are hiring all local contractors in the Athens area to help support the local economy.
We will be expanding our tap count and will be able to host private tours of operation. Our old Sugar Shaq will house a lot of our production supplies and will continue to support the operation. We couldn’t be more excited and our fingers are crossed we will be making syrup in the new Sugar Shaq next year. More updates to come!
