Reverse Seared Tri Tip!
Took a 2.5 lb dry aged Tri Tip and got it cleaned up with my 9in Chef Knife. Then got my Olive Oil Binder down and came in with a Dry Rub Combo of Blanco and Black.
Fired up my Ironwood XL to 225 and then got the Tri Tip on for the smoke bath. I used my Pro to measure the temps and took this to 115 before I seared if off and pulled at 127 internal. This will rest for 15 minutes and then sliced open with the Knife. I made a side Cowboy butter with Cowboy butter rub and some melted butter. This turned out Fire!!!
