Reverse Seared Tri Tip!

Took a 2.5 lb dry aged Tri Tip and got it cleaned up with my 9in Chef Knife. Then got my Olive Oil Binder down and came in with a Dry Rub Combo of Blanco and Black.

Fired up my Ironwood XL to 225 and then got the Tri Tip on for the smoke bath. I used my Pro to measure the temps and took this to 115 before I seared if off and pulled at 127 internal. This will rest for 15 minutes and then sliced open with the Knife. I made a side Cowboy butter with Cowboy butter rub and some melted butter. This turned out Fire!!!

Beef Chorizo Street Corn!

Took 100% Grass Fed & Finished Beef Chorizo and combined with Corn, Cotija Cheese, Crema Fresca, Pickled Red Onions and Cilantro. All of this was cooked on the Flat Rock for maximum crust and flavor!

The Hail Mary Steak and Butter Board for week #5!

Although my Giants are the laughing stock of the NFL this board hit all the marks! Reverse seared Tomahawk, Tri Tip and Hangar Steak with Chimichurri, herbed butter and Herbed Garlic! Pro Duo kept the temps rolling through!
