In 1958, a bricklayer named John Bishop opened a little cinder-block joint in the Jerusalem Heights neighborhood of Tuscaloosa, and Alabama barbecue was never the same. 🔥

Dreamland started with a simple menu built around one glorious thing, ribs cooked over an open pit of hickory and oak, slathered in a tangy tomato-based sauce that people still whisper about with reverence. The story goes that Big Daddy Bishop got the idea in a dream, prayed on it, and the name Dreamland was born.

For decades, the original location served ribs, white bread to sop up the sauce, and not much else. If you asked for a salad, the old line was that you were in the wrong place. That focus, that refusal to be anything other than exactly what it was, is a big part of what made it legendary. People drove hours just to sit at those worn tables under the glow of neon and the walls covered in decades of signatures and memories.

Alabama has a barbecue tradition as rich as anywhere in the country, from the white sauce of North Alabama to the smoky pits of the Black Belt. But Dreamland became something more than a restaurant. It became a rite of passage, a place where Crimson Tide fans gathered on game days and families marked birthdays and anniversaries with sticky fingers and full hearts.

More than sixty-five years later, that first pit is still going, and the smell of hickory smoke still drifts across the neighborhood. 🍖

Some recipes are handed down. Some are dreamed up. And every once in a while, one becomes part of the soul of an entire state.

That is really, really, really bad. What else can it do the big orange blob? It’s not even human and can’t even really speak. He just kind of bloods around out of a teeth with no lips. Next time you look at him. Good luck notice he has no lips that’s why he had to find his last three wives from immigrants. They’re the only ones that will do things that Americans want.
