The last tray of cookies came out of the oven in the wee hours of the morning. After a few hours of sleep, the Deluxe Treat Trays are packaged and ready for pick up this afternoon. In the last few weeks, I have made almost 2,000 treats. 😱 Time for a few weeks of vacation from baking!

Hot Cocoa Bombs are the latest treat to take the US by storm. These fun chocolate spheres are placed in a mug and hot liquid is slowly poured over them, causing them to break open and spill out the cocoa mix and marshmallows. I am currently working my way through orders for about 200! I thought you might like to see the process I use to make them.

This photo popped up in my FB Memories today. This is my grandma, Virginia Luella, who is the inspiration behind Ginny Lu. Six years ago, I was hosting my annual Bakin’ Chicks weekend with 12 ladies. In her late 80s that year, Grandma joined us to show us how to make kringla, a traditional Norwegian cookie. Although she made dozens and dozens of kringla every Christmas (and throughout the year), I had never mastered the knot-making technique. Grandma passed away almost two years ago and I will be practicing my kringla skills this month in her memory.

Ever want to make banana bread or something else that needs ripe bananas but the store only has green ones? I only recently learned that you can quickly ripen bananas in the oven! Today I was able to try it out! Just line a baking sheet with aluminum foil and place your bananas on it (with the peel still on). Bake at 300° for 15-20 minutes. The peel will turn black but the insides will ripen nicely.
