Baked Shrimp with Creamy Old Bay Boursin
Ingredients:
- 1.5 lbs large shrimp
- 1 package (5.2 oz) Boursin cheese with herbs
- 1 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 tablespoons Old Bay seasoning
- 2 tablespoons fresh parsley, finely chopped
- 1/4 cup heavy cream
- 3 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 egg
- Juice of 1 lemon
- Salt and pepper to taste
- 1 tablespoon olive oil
- Cooking spray
Instructions:
1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with cooking spray.
2. Pat the shrimp dry with paper towels to remove any excess moisture. Dry shrimp ensures better coating adhesion.
3. In a small saucepan over low heat, combine the Boursin cheese with the heavy cream. Stir gently until the cheese melts and creates a smooth, creamy sauce, about 2-3 minutes. Set aside to cool slightly.
4. In a shallow bowl, combine the panko breadcrumbs, Parmesan cheese, Old Bay seasoning, and fresh parsley. Mix well.
5. In another shallow bowl, whisk together the mayonnaise, Dijon mustard, and egg until smooth and fully combined.
6. Season the shrimp lightly with salt and pepper.
7. Dip each shrimp into the egg, mayonnaise, and Dijon mixture, coating it completely.
8. Spread a small amount of the cooled Boursin cream over each coated shrimp.
9. Roll each shrimp in the Old Bay panko mixture, pressing gently so the crust adheres well on all sides.
10. Arrange the crusted shrimp on the prepared baking sheet in a single layer. Drizzle lightly with olive oil to promote browning.
11. Bake for 10-12 minutes, until the panko crust is golden brown and crispy and the shrimp are cooked through and opaque.
12. Remove from the oven and let cool for 1-2 minutes. The crust will continue to crisp as it rests.
13. Drizzle with fresh lemon juice just before serving.
14. Serve hot, optionally with cocktail sauce or additional lemon wedges for dipping.
