13.5 YEARS OLD. 95/5 MGP RYE. AND 18 MONTHS IN COLORADO. šŸ„ƒšŸ”„

If you’ve ever wanted to get your hands on a Miami Bourbon Society pick, this is your chance.

We have a very limited number of bottles available now on the O&A website—and this one is an incredible example of what time in Colorado can do to mature whiskey.

This 2013 MGP 95/5 rye was already well into its maturation when it came to Colorado. Then we gave it another 18 months aging at altitude, where our dry climate and swings in temperature and barometric pressure went to work.

What came out of the barrel is anything but your typical 95/5 rye.

Dark. Robust. Rich. Flavorful.

The rye spice is still there, but it’s wrapped in deep mature oak, richness and complexity that make this just as compelling for the bourbon drinker as it is for the rye fanatic.

That’s what excites us about aging mature whiskey in Colorado. We’re not trying to erase where it came from—we want to see what Colorado can add to it.

Tomorrow, September 11th, Commodore’s Cut No. 3 releases online and at the Onyx & Amber distillery.

This is a bottle with purpose—and some seriously incredible whiskey behind it.

We started with a 9-year-old Middle West Spirits 95/5 Pumpernickel Rye, then double-oaked it in the original Commodore’s Cut No. 1 Canton Cooperage barrel—the same barrel that previously held an 11-year MGP 60/36/4 bourbon.

The result is something special.

A beautiful, fruit-forward mature rye layered with the lingering character of that 60/36/4 bourbon. Rye spice, dark fruit, sweetness and mature oak weave back and forth throughout the pour. A true double oak where you can actually taste the influence of both whiskeys.

9 Years Old | 129 Proof | Only 150 Bottles

Commodore’s Cut No. 3 was created in recognition of Patriot Day and the 25th anniversary of September 11th, honoring the first responders who ran toward danger when others were running away.

And just like every Commodore’s Cut, this bottle is about more than whiskey. Tunnel to Towers is the charitable beneficiary of this release.

THIS is what a true double oak can do. 🄃

Commodore’s Cut No. 3 has an important story behind it—but today, we just want to talk about the whiskey.

Because this rye is something special.

We started with a beautiful 9-year-old Middle West Spirits 95/5 Pumpernickel Rye—mature, fruit-forward, rich, and already capable of standing completely on its own.

Then we gave it another barrel.

But not just any barrel.

We moved the rye into the Canton Cooperage barrel that held the original Commodore’s Cut No. 1—an 11-year-old MGP 60/36/4 bourbon.

That’s where things got really interesting.

This wasn’t simply about adding more oak. The barrel still carried the influence of that mature high-rye bourbon, allowing a little of its character to work its way into the pumpernickel rye.

The result is a beautiful marriage between two completely different whiskeys.

Fruit-forward rye meets mature bourbon.
Dark fruit and rye spice. Rich sweetness. Seasoned oak. And underneath it all, that little touch of 60/36/4 bourbon character weaving in and out of the pour.

At 129 proof, there’s plenty of power—but it’s the back-and-forth between the rye and bourbon notes that makes this one so much fun.

Take a sip and you might think rye.

Go back again and suddenly there’s the bourbon.

That’s what we want from a true double oak. Not just more wood—another layer of whiskey.

4.5 BARRELS. AGAIN. šŸ„ƒšŸ”„

This one means even more.

Breaking Bourbon⁠ is one of the most respected whiskey review sites in the industry, and anyone who follows their reviews knows they don’t hand out 4.5-barrel scores lightly.

Earlier this year, our 20-Year A Little Bit of Lightning earned a 4.5-barrel rating from Breaking Bourbon, who called it a ā€œdelicious-tasting pourā€ with a deeply sweet, dessert-like profile.

Today, we backed it up.

Copper Buffalo Batch 2 — 4.5 BARRELS. 🦬⚔

21 years old.
141.10 proof.
Finished in our Buff Turkey barrels.
And another 4.5 from Breaking Bourbon.

Their description pretty much says it all:

ā€œAn intensely rich, caramel-driven pour.ā€

They found caramel chew candy, cinnamon frosting, cream soda, molasses and maple syrup on the nose, followed by melted caramel, browned butter, dulce de leche cheesecake and turtle brownie on the palate. And they described that caramel character as ā€œwarm and gooey,ā€ with buttery richness throughout.

But our favorite part might be their conclusion:

ā€œOnyx & Amber is on a roll with their American light whiskey releases.ā€

We’re only about a year and a half into this thing.

To have two different releases earn 4.5 barrels from Breaking Bourbon in the same year is something we’re incredibly proud of.

We’re going to keep finding exceptional whiskey. Keep letting Colorado do its thing. Keep experimenting with finishes that actually make the whiskey better. And keep putting bottles out at prices that encourage you to open them and drink them.

Our 2016 Smooth Ambler wheated bourbon barrels are officially ready to enter the Onyx & Amber Single Barrel Program.

Are they older than 10 years? Absolutely. Closer to 11? YUP

So why are we just releasing them now?

Because the calendar doesn’t decide when our whiskey is ready. We do.

We let these barrels continue aging until the whiskey told us it was time. Now, after tasting through them, we’re ready to start putting them in front of our Single Barrel customers.

There’s something pretty special about seeing a barrel come full circle. šŸ„ƒāš¾ļø

Back on May 4th, we had the pleasure of hosting a group of New York Mets pitchers, coaches, training staff and friends at the Onyx & Amber distillery for a private barrel selection.

After tasting through the lineup, there was one that separated itself from the pack — a very special 10-year Barton bourbon that was easily the team favorite. The decision was made, the barrel was claimed, and now it’s time to get that whiskey into bottles.

Huge thanks to Bebox Raley , Luke Weaver , Craig Kimbrel and Clay Holmes from the Mets pitching staff at the time, along with the coaches and training staff who joined us, and Brady Johnson and Chris for making the day one we won’t forget.

A lot can change over the course of a baseball season. David Stearns may have broken the crew up at the deadline, but nobody can take this barrel pick away from us. šŸ˜‚

The roster may have changed, but we’ll always have that weekend at O&A.

And now… it’s dumping day.

Another one-of-one barrel about to make its way into the world.

18 months. That’s it. 🄃

Onyx & Amber has only been open for 18 months, and weekends like this one are still hard for us to wrap our heads around.

To everyone who showed up early for the Copper Buffalo 2 release, grabbed a bottle online, shared our posts, told a friend, poured our whiskey, or has supported us at any point along this ride — thank you.

We know there are a lot of incredible bottles fighting for space on your shelf. The fact that you choose to make room for ours means more to us than you probably realize.

We started Onyx & Amber with a pretty simple idea: find exceptional whiskey, be transparent about what it is, do things differently, and never release something just because we can. Eighteen months later, this community has allowed us to keep pushing that idea further than we imagined.

We hope everyone who picked up Copper Buffalo Batch 2 absolutely loves it. Crack it open. Share it with some good people. Let us know what you think.
